There's just something about Smothered Pork Chops that screams comfort food. Tender pork, swimming in a rich and savory gravy... It's a Southern classic for a reason! But sometimes, you just don't have time to stand over the stove. That's where this Slow Cooker Smothered Pork Chops recipe comes in! I'm taking that classic, melt-in-your-mouth goodness and making it unbelievably easy with your slow cooker. This is true comfort food, made simple!

Conventionally, this recipe is cooked on the stove-top, searing the pork chops then removing and making up the gravy - then adding back and simmering.

This is similar, but the nature of the slow-cooking method just gives way to the juiciest most tender pork chops you'll ever eat.

What Makes Slow Cooker Smothered Pork Chops So Good?

Being able to just set it and forget it makes this recipe very convenient. If you know you have somewhere to be but want a good home-cooked meal when you get home - this is the one.

The pork chops come out so tender and flavorful.

Groceries you'll need: Ingredients

Ingredients needed to make a crock pot smothered pork chops recipe.
  • Bone-in Pork Chops
  • All Purpose Flour
  • Cajun Seasoning
  • Onion Powder
  • Garlic Powder
  • Cream of Mushroom Soup
  • Beef Broth
  • Yellow Onion
  • Mushrooms
  • Dried Thyme
  • Browning Sauce
  • Vegetable Oil

  • Step 1: Add the flour, Cajun seasoning, onion powder and garlic powder to a small pan or plate and mix together.
  • Step 2: Pass the pork chops through this flour to coat.
  • Step 3: Heat a large skillet over medium-high heat then add the pork chops in batches until they're all seared on both sides.
  • Step 4: Add the chopped onions and mushrooms to the bottom of a 7 quart slow cooker.

  • Step 5: Lay the seared pork chops on top of the mushrooms and onions.
  • Step 6: In a large bowl add the mushroom soup, beef broth, browning sauce and dried thyme and mix together well with a whisk.
  • Step 7: Pour over the top of the pork chops.
  • Step 8: Cover and cook on low for 8 hours.

Hint: Due to the fat in the pork chops you will probably get a layer of grease on top. I use a ladle and skim the top. You can get most of it like this.

Recipe variations and substitute ideas

Following is a list of variations and alternate ideas for substitutes that you could play with in this recipe:

  • Creamy Gravy: Add a dollop of sour cream or cream cheese at the end.
  • Mushroom Gravy: Sauté sliced mushrooms with the onions and garlic.
  • Onion Soup Mix: Add a packet of onion soup mix for extra flavor.
  • Spicy: Add a pinch of red pepper flakes or a dash of hot sauce.
  • Bacon: Crumble cooked bacon over the pork chops before serving.
  • French Onion: Top with Onions and cheese and make it french onion soup style

Recipe troubleshooting

A place to see any obvious issues that we encountered when testing this recipe for you:

  • Gravy is Too Thin: Try mixing cornstarch with cold water and stirring it into the gravy. I also love to add instant mashed potato flakes to a dish like this - to thicken.
  • Gravy is Too Thick: Add a little more broth.
  • Pork Chops are Dry: Reduce cooking time. Make sure they don't cook too long. Add some butter.
  • Pork Chops are Tough: Searing the pork chops helps lock in the tenderness.

I use a 7 Quart slow cooker for this recipe, you could probably go down to a 6 quart but no smaller, unless you reduce the servings.

You'll also need a skillet to sear the pork chops.

How to store leftovers

These smothered pork chops should be stored in an airtight container in the refrigerator for up to 4 days.

This recipe will actually freeze well. If you store in a freezer safe container, freeze for up to 3 months.

It may seem like the sauce is not thick enough when it has first finished cooking, but once you turn the heat off and the sauce starts to cool down, it will start to thicken too.

Frequently asked questions: FAQs

Can I make this without searing the pork chops?

You can, but I wouldn't recommend it. The action of searing the pork chops actually helps retain juices and ensures the pork chops don't dry out.

What kind of pork chops work the best?

I like to use a bone-in loin chop, they have beautiful marbling throughout which add flavor and the bone also adds flavor.

  • 1 Large 12" Skillet
  • 1 Glass Mixing Bowls
  • 1 7 Quart Crock Pot

Ingredients

  • 4 Pounds Bone-In Pork Chops
  • 3 Tablespoons All Purpose Flour
  • 1 teaspoon Cajun Seasoning
  • ½ teaspoon Garlic Powder
  • ½ teaspoon Onion Powder
  • 2 Tablespoons Vegetable Oil
  • 1 Each Yellow Onion chopped
  • 8 Ounces Mushrooms sliced
  • 1 (10 Ounce) Can Cream of Mushroom Soup
  • 3 Cups Beef Broth
  • 2 teaspoons Browning Sauce
  • ½ teaspoon Dried Thyme

Instructions

  • Add the flour, Cajun seasoning, garlic powder and onion powder to a plate, or small pan and mix together.
    3 Tablespoons All Purpose Flour, 1 teaspoon Cajun Seasoning, ½ teaspoon Garlic Powder, ½ teaspoon Onion Powder
  • Pass the pork chops through this flour mixture.
    4 Pounds Bone-In Pork Chops
  • Add the vegetable oil to a large skillet and sear the pork chops on both sides.
    2 Tablespoons Vegetable Oil
  • Lay the onions and mushrooms in the bottom of a 7 quart crock pot.
    1 Each Yellow Onion, 8 Ounces Mushrooms
  • Arrange the seared pork chops on top.
  • In a large mixing bowl, add the cream of mushroom, beef broth, browning sauce and dried thyme and mix well with a whisk.
    1 (10 Ounce) Can Cream of Mushroom Soup, 3 Cups Beef Broth, 2 teaspoons Browning Sauce, ½ teaspoon Dried Thyme
  • Pour over the top of the pork chops.
  • Cover and cook on low for 8 hours (or high for 4 hours).

Notes

If you want, carefully remove the pork chops from the gravy and thicken more if needed (and vice versa). I love to add instant potato flakes to anything like this to help thicken.
You can also take this opportunity to skim any of the collected grease from the fat on the pork chops off the top of the gravy too. Then carefully put the pork chops back into the gravy.
