There's a lot of love that goes into a big ol' pot of gumbo!

Soak Alligator Meat overnight in buttermilk and seasonings.

Add oil and flour to make a roux.

Cook roux continuously stirring until dark chocolate in color.

Chop vegetables and sausages.

Add smoked sausage and caramelize.

Add trinity of vegetables and cook until translucent.

Add garlic and cook another 2 minutes.

Add chicken stock and stir well.

Stir that Gumbo with love!

Add seasonings and stir well. Simmer for 1 hour.

Add alligator meat and simmer again 1 more hour.

Add shrimp, give a good stir and turn off the heat.

It's ready. A big ol' pot of delicious Alligator and Shrimp Gumbo.

Serve with white rice and potato salad.
