  • 1.5 lb Frozen Tater Tots
  • 3 Cups Shredded Rotisserie Chicken
  • 1 Cup Sour Cream
  • 16 oz Cream Cheese
  • ¼ Cup Milk
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 2 Cups Colby Jack Cheese shredded and divided
  • 6 Green Onions chopped (divided)
  • 5 Large Jalapeno Peppers toasted and chopped
  • 1 lb Bacon cooked, diced and divided

Instructions

  • Preheat the oven to 425°F.
  • Layer the tater tots in the bottom of a 9x13" casserole dish and bake for 20 minutes.
  • In the meantime, deseed the jalapenos (optional), then toast in a large skillet for about 5 minutes each side, over medium-high heat.
  • Add the cream cheese, sour cream, milk and seasonings to the bowl of a stand mixer then mix with the paddle attachment, on low, for 2 minutes, until creamy.
  • Add half of the bacon, half of the green onions, half of the shredded cheese and the diced, toasted jalapenos and mix again.
  • Layer the shredded chicken on top of the baked tater tots.
  • Spread the cream cheese mixture evenly on top of the chicken layer.
  • Top with the remaining cheese.
  • Then top with the remaining bacon, green onions and some slices of jalapenos.
  • Bake in the oven for 20-25 minutes, until bubbly all around.
  • Remove and allow to sit for 10 minutes before digging in.
