1.5lbFrozen Tater Tots
3CupsShredded Rotisserie Chicken
1CupSour Cream
16ozCream Cheese
¼CupMilk
1teaspoonGarlic Powder
1teaspoonOnion Powder
1teaspoonSalt
1teaspoonBlack Pepper
2CupsColby Jack Cheeseshredded and divided
6Green Onionschopped (divided)
5Large Jalapeno Pepperstoasted and chopped
1lbBaconcooked, diced and divided
Instructions
Preheat the oven to 425°F.
Layer the tater tots in the bottom of a 9x13" casserole dish and bake for 20 minutes.
In the meantime, deseed the jalapenos (optional), then toast in a large skillet for about 5 minutes each side, over medium-high heat.
Add the cream cheese, sour cream, milk and seasonings to the bowl of a stand mixer then mix with the paddle attachment, on low, for 2 minutes, until creamy.
Add half of the bacon, half of the green onions, half of the shredded cheese and the diced, toasted jalapenos and mix again.
Layer the shredded chicken on top of the baked tater tots.
Spread the cream cheese mixture evenly on top of the chicken layer.
Top with the remaining cheese.
Then top with the remaining bacon, green onions and some slices of jalapenos.
Bake in the oven for 20-25 minutes, until bubbly all around.
Remove and allow to sit for 10 minutes before digging in.
