Ingredients

  • 4 Large Cobia Fillets
  • Cup Butter Unsalted, melted
  • 2 Tablespoons Olive Oil
  • 2 Tablespoons Lemon Juice
  • 3 Garlic Cloves minced
  • Salt and Pepper to taste

Instructions

  • Preheat the grill on high setting. Clean if needed.
  • Mix the melted butter, olive oil, garlic, lemon juice, salt and pepper and stir together.
  • Brush liberally over the cobia fillets on both sides.
  • Place on the grill and cook for about 6-7 minutes on each side.
  • Remove and cover with foil for a couple minutes while you prepare the remaining sides.

Notes

The cobia fillets I had were about 2" thick. This took 6 minutes each side to cook, on a high setting on the grill. The fish remained nice and moist and was not overcooked. If your fish fillets are smaller you might want to reduce the cooking time.
