Vanilla Brownies

Vanilla Brownies are the best brownies - with a vanilla frosting and full of pecans and white chocolate. Fudgy brownies that are perfect for that sweet tooth!

Ingredients

  • ½ Cup Butter unsalted
  • 1 12oz Bag White Chocolate Chips
  • 1-¼ Cups All Purpose Flour
  • ¾ Cup Granulated Sugar
  • ¼ Cup Chopped Pecans
  • 1 Teaspoon Clear Vanilla Extract
  • ¼ Teaspoon Almond Extract
  • ¼ Teaspoon Salt
  • 3 Large Eggs

Glaze

  • 1-½ Cups Powdered Sugar
  • 3 Tablespoons Unsalted Butter softened
  • ½ Teaspoon Clear Vanilla Extract
  • 1-2 Teaspoons Milk

Instructions

  • Preheat the oven to 350°F and grease a 13x9 inch pan.
  • In a saucepan over low-medium heat melt the butter and most of the white chocolate chips (keep a handful to the side for the next step).
  • Once the butter has melted and the chocolate chips are mostly melted remove from the heat and keep stirring.
  • Add the reserved chocolate chips and stir in to the rest.
  • Add this mixture to a large mixing bowl and add the flour, sugar, pecans, clear vanilla, almond extract, salt and eggs. Mix until combined.
  • Pour batter into the greased baking dish and spread out evenly.
  • Bake uncovered for about 30 minutes, until the outsides have started to brown and a toothpick inserted into the middle comes out clean.
  • Remove from the oven and allow to cool completely.
  • In a medium mixing bowl add the powdered sugar, softened butter, clear vanilla and milk until you have the right consistency for a glaze. You should be able to spread it on.
  • Using a spatula spread the glaze on top of the brownies, evenly.
  • Cut into squares and serve.

Notes

These vanilla brownies (vanilla blondies) are really easy to dress up for any occasion. Just add seasonal sprinkles!
If you're afraid the brownies might stick feel free to line the dish with parchment paper or aluminum foil. I didn't have any issues, greasing the pan worked fine.
If you prepare these vanilla brownies ahead of a function cover the brownies with plastic wrap before you glaze them. Then you can make/apply the glaze fresh as you need.
