Mortar and Pestle Guacamole

This creamy tasty and sometimes quite fiery version of the authentic Mortar and Pestle Guacamole is so addictive you won't be able to stop until the bowl is empty.

Ingredients

  • 2 Large Ripe Avocadoes
  • 2 Roma Tomatoes peeled and deseeded
  • 6 Green Onions finely chopped
  • 2 Chili Peppers deseeded and finely diced
  • 2 Tablespoons Lime Juice
  • 2 Tablespoon Fresh Cilantro chopped
  • Salt and Pepper to taste

Instructions

  • Add the sliced green onions, jalapeno peppers, and cilantro to a large mortar and pestle.
  • Crush until a paste is formed.
  • Add the lime juice and salt and pepper and crush again.
  • Add one peeled avocado and crush. Mix well.
  • Add the remaining avocado and peeled chopped tomatoes and stir to combine.

Notes

I like to taste the chili pepper to gauge heat before deciding how much I'm going to add.
Lemon can be used in place of lime.
Use the stones of the avocado and place into the dip to help length of time before browning occurs.
