Ingredients

Step 1

Make a Roux. Add the oil and flour to a large soup pot and over a low heat cook until a dark chocolate color is formed.

Add the Trinity. Add the trinity of vegetables followed by the sausage and caramelize!

Add stock and cook.  Add seafood in last 15 minutes of cooking time.
