Banana Dream Cake

A copycat Toojays Banana Dream Cake that you can make at home. A light banana flavored sponge cake with banana cream filling and a chocolate ganache. Walnuts and chocolate chips cover the edges.

Ingredients

  • 1 Box Yellow Cake Mix
  • 3 Large Ripe Bananas mashed
  • 1 14oz Can Sweetened Condensed Milk
  • ½ Cup Butter softened unsalted
  • 1 teaspoon Vanilla Extract
  • 2 3.4oz Box Banana Cream Pudding Mix
  • 2 Cup Milk
  • 4 Cups Heavy Whipping Cream
  • 8 oz Semi Sweet chocolate grated
  • 1 Cup Chopped Walnuts
  • ½ Cup Chocolate Chips

Instructions

  • Preheat your oven to 350°F.
  • Add bananas, sweetened condensed milk, butter and vanilla to the bowl of a stand mixer.
  • Mix well, then add the cake mix. Mix on low speed for 1 minute.
  • Spray (3) 8" round cake tins with Baker's Joy (or Pam with the flour in it). Fill each evenly with the cake mixture.
  • Bake in the oven or 18-20 minutes, or until a toothpick comes out clean.
  • Remove from the oven, allow to cool for 2 minutes, then carefully turn out onto a cooling rack, to cool completely.
  • Once cooled, take 3 ups of cream and whip up until stiff peaks form.
  • In a large mixing bowl add the milk and pudding mix and stir with a whisk until combined. Mix in the whipped cream and allow to sit for 5 minutes.
  • Then, spread some filling on top of the first layer of cake.
  • Add another layer of cake on top and repeat.
  • Spread the remaining filling on the outside of the cake.
  • Press chopped walnuts and chocolate chips into the sides of the cake.
  • Make the ganache. Take the remaining 1 cup of cream and heat in the microwave until just starting to bubble.
  • Pour over the grated chocolate and allow to sit for 1 minute.
  • Stir well with a spoon and allow to sit for 5 minutes, stir again, then pour over the top of the cake.
  • Set in the refrigerator to allow the ganache to set.
