Banana Dream Cake

Banana Dream Cake from Toojays is a delicious treat that you can make at home and have it taste just like the real deal. A decadent banana cake with all the chocolate trimmings.

There's not really a special season for this treat from Toojays. So I believe you can make it year round.

It could be a special kind of treat around Easter though.

What makes this recipe so yummy

  • If you love the Banana Chocolate kind of flavors then this cake is definitely for you.
  • Without too much effort you can have a pretty amazing looking cake.
  • I love this so much I sometimes ask for it as a birthday cake.

Recipe walkthrough: Instructions

This is an overview of the recipe steps. For more detailed instructions visit the recipe card at the bottom of this post.

  • Step 1: Add the mashed bananas, sweetened condensed milk, vanilla and butter to the bowl of a stand mixer. Mix well with the paddle attachment.
  • Step 2: Add the cake mix and mix, on low speed, for 1 minute.
  • Step 3: Divide batter between 3 (8") round cake pans greased and floured.
  • Step 4: Bake in a preheated oven for 18 minutes.

  • Step 5: Turn out onto a wire rack and cool completely.
  • Step 6: Beat the whipping cream until stiff peaks form. Mix with the pudding mix and milk. Let sit for 2 minutes.
  • Step 7: Spoon a thick layer of frosting over the first layer of cooled cake. Place another layer of cake on top and repeat.
  • Step 8: Use the remaining filling and spread around the outside of the cake.
  • Step 9: Make the ganache. Take 1 cup of heavy cream and microwave until just starting to bubble. Pour over grated chocolate and let sit for 2 minutes.
  • Step 10: Take chopped walnuts and chocolate chips and press into the sides of the cake, liberally.
  • Step 11: Pour the ganache over the top of the cake, just until it starts dripping down the side.
  • Step 12: Refrigerate 30 minutes to help the ganache to set.

Hint: Don't leave the ganache too long after adding the cream and stirring or it will thicken and not be pourable. You'll have to start again.

Recipe variations and substitute ideas

  • Sour Cream - add a little of this to the cake mixture for added richness.
  • Cinnamon - a pinch of cinnamon.
  • Lemon Juice - a splash.
  • Peanut Butter Frosting - this would be such a good option.
  • Cream Cheese Frosting - another good alternative.

How to store leftovers

Once the cake has been completed store refrigerated in an airtight container (or cover with plastic wrap), for up to 1 week. It could sit at room temperature, but not for too long before the chocolate would get icky.

Mel's kitchen notes

Change up the flavor of the filling by changing the flavor of the pudding mix. I used banana cream pie, but you could try cheesecake, or plain vanilla.

Banana Dream Cake

Equipment

  • Cooling Racks
  • 3 Pieces Layer Cake Tin
  • Whitewash Wood Cake Stand
  • Stand Mixer

Ingredients

  • 3 Each Bananas mashed
  • 1 (14 Ounce) Can Sweetened Condensed Milk
  • ½ Cup Unsalted Butter softened unsalted
  • 1 teaspoon Vanilla Extract
  • 1 (15 Ounce) Box Yellow Cake Mix
  • 4 Cups Heavy Whipping Cream divided
  • 2 (3.4 Ounce) Boxes Banana Cream Instant Pudding Mix
  • 2 Cups Milk
  • 8 Ounces Semi-sweet Chocolate grated
  • 1 Cup Walnuts
  • ½ Cup Chocolate Chips

Instructions

  • Preheat your oven to 350°F.
  • Add bananas, sweetened condensed milk, butter and vanilla to the bowl of a stand mixer.
    3 Each Bananas, 1 (14 Ounce) Can Sweetened Condensed Milk, ½ Cup Unsalted Butter, 1 teaspoon Vanilla Extract
  • Mix well, then add the cake mix. Mix on low speed for 1 minute.
    1 (15 Ounce) Box Yellow Cake Mix
  • Spray (3) 8" round cake tins with Baker's Joy (or Pam with the flour in it). Fill each evenly with the cake mixture.
  • Bake in the oven or 18-20 minutes, or until a toothpick comes out clean.
  • Remove from the oven, allow to cool for 2 minutes, then carefully turn out onto a cooling rack, to cool completely.
  • Once cooled, take 3 cups of cream and whip up until stiff peaks form.
    4 Cups Heavy Whipping Cream
  • In a large mixing bowl add the milk and pudding mix and stir with a whisk until combined. Mix in the whipped cream and allow to sit for 5 minutes.
    2 (3.4 Ounce) Boxes Banana Cream Instant Pudding Mix, 2 Cups Milk
  • Then, spread some filling on top of the first layer of cake.
  • Add another layer of cake on top and repeat.
  • Spread the remaining filling on the outside of the cake.
  • Press chopped walnuts and chocolate chips into the sides of the cake.
    1 Cup Walnuts, ½ Cup Chocolate Chips
  • Make the ganache. Take the remaining 1 cup of cream and heat in the microwave until just starting to bubble.
    8 Ounces Semi-sweet Chocolate, 4 Cups Heavy Whipping Cream
  • Pour over the grated chocolate and allow to sit for 1 minute.
  • Stir well with a spoon and allow to sit for 5 minutes, stir again, then pour over the top of the cake.
  • Set in the refrigerator to allow the ganache to set.

    With the cake being an enhanced box cake, I think the recipe is fairly easy. I think the icing tastes a lot like a Banana Laffy Taffy, which might be a little too sweet for some people or just perfect for others. While I think this is a delicious recipe, it doesn't taste too much like a Toojay's Banana Dream Cake.

    The cake ends up very sticky and hard to manipulate, not certain if anyone else encountered this. For now it’s in the freezer as it was so hard to removed from pan even though I did put Pam and flour before pouring the batter.
