Indulge in these rich and decadent Fudgy Rocky Road Brownies, topped with gooey marshmallows and crunchy nuts. This simple recipe is perfect for satisfying your sweet tooth.
Rocky Road is a particular flavor of ice cream that was invented back in the 1920's during the Wall Street crash (the great depression) - it was a chocolate ice cream with nuts and marshmallows.
It was to remind people that it may be a rocky road, but good things can still happen.
These brownies mimic that ice cream flavor, of chocolate, nuts and marshmallows.

- Step 1: Add the butter and bittersweet chocolate to a bowl and melt in the microwave in 20 second blasts.
- Step 2: Add the granulated sugar and stir until dissolved.
- Step 3: Add the eggs, and egg yolk, beating all the time. Then add the vanilla.
- Step 4: In a separate bowl add the flour, espresso powder, baking soda and salt and mix well with a whisk.
- Step 5: Add the flour mixture to the egg mixture, while beating.
- Step 6: Line a 9 inch pan with foil and spray with cooking spray. Bake in the oven for 10-12 minutes.
- Step 7: Remove from the oven and turn down the oven to 325°F. Sprinkle the chopped almonds on top of the brownie pan.
- Step 8: Next sprinkle the mini marshmallows, followed by the chocolate chunks. Bake again for another 8-9 minutes.
- Step 9: Remove from the oven and allow to cool completely, then place in the refrigerator for a few hours to completely set.
Hint: Warm up one of the brownies until melty then add a scoop of ice cream on the side for a delicious dessert idea much like a rocky road ice cream.
Recipe variations and substitute ideas
- Chocolate chips - instead of chunks.
- Cocoa Powder - this could be used instead of the bittersweet chocolate at the beginning of the brownie recipe.
- Brown Sugar - could be used instead of granulated.

How to store leftovers
Store the rocky road brownies at room temperature in an airtight container lined with paper towels for up to 5 days.
They will last for longer if you want to keep them in the refrigerator.

- 6 Tablespoons Unsalted Butter
- 4 Ounces Bittersweet Chocolate broken up
- ⅔ Cup Granulated Sugar
- 2 Each Large Eggs + 1 Yolk
- 2 teaspoons Vanilla Extract
- ⅔ Cup All Purpose Flour
- ¼ teaspoon Baking Soda
- ½ teaspoon Espresso Powder
- ¼ teaspoon Salt
- 1 Cup Almonds chopped
- 1 Cup Mini Marshmallows
- ¾ Cup Semi-sweet Chocolate Chunks
Instructions
- Preheat oven to 350°F.
- Add the butter and broken up bittersweet chocolate to a microwave safe bowl and heat in blasts of 20 seconds, stirring between, until melted.6 Tablespoons Unsalted Butter, 4 Ounces Bittersweet Chocolate
- Stir in granulated sugar, until dissolved.⅔ Cup Granulated Sugar
- Add the eggs, once cooled. One at a time, while beating. Followed by the vanilla.2 Each Large Eggs, 2 teaspoons Vanilla Extract
- In a separate bowl add the flour, baking soda, espresso powder and salt. Mix with a whisk.⅔ Cup All Purpose Flour, ¼ teaspoon Baking Soda, ½ teaspoon Espresso Powder, ¼ teaspoon Salt
- Slowly pour into the egg mixture, while still beating. Until totally incorporated.
- Spray a 9" baking pan with cooking spray, then line with foil with some overhang. Spray the foil with cooking spray.
- Pour the brownie batter into the pan.
- Bake in the oven for 10-12 minutes.
- Remove and turn the oven down to 325°F.
- Sprinkle the chopped almonds on top of the cooked brownie.1 Cup Almonds
- Sprinkle the mini marshmallows on top, then the chocolate chunks on top of that.1 Cup Mini Marshmallows, ¾ Cup Semi-sweet Chocolate Chunks
- Bake again for another 8-9 minutes.
- Remove from the oven. Allow to cool completely, then set in the refrigerator for a few hours.
