This quick and easy recipe for Brownie Bites will have you throwing together these perfect little treats quicker than the blink of an eye. They're the perfect bite size fudgy little brownies that the kids love.

What makes this recipe so yummy

  • Sometimes, when I'm having chocolate cravings I just pop one of these bite size brownies then I'm good. Or for after a meal, some desserts are too much. This is like that perfect bite of sweetness.
  • They're also the perfect size for any cute little toddler fingers. They're great snacks for the kids- cookies for the cuteness factor.
  • A box mix for brownies literally costs about $1. How can you beat that?
  • They're great for adding to kid's lunch boxes.
  • This is a one-bowl recipe so there's minimal clean up.

Recipe walkthrough: Instructions

  • Step 1: Preheat the oven to 350°F. Carefully mix the brownie mix (dry ingredients) with the eggs, water and vegetable oil in a large bowl. Careful not to overmix.
  • Step 2: Spray a mini muffin tin with kitchen spray then in small scoops spoon the batter into each well to ⅔ full.
  • Step 3: Bake for 10 minutes then remove and allow to cool on a wire rack.
  • Step 4: Carefully twist out of the mini muffin pan.

Hint: lf you do have trouble removing them, use a plastic fork to help loosen up the brownie bites to remove them.

Recipe variations and substitute ideas

Homemade Brownie Recipe - If you prefer a homemade version of brownies, instead of a box mix then go for it. Here's a quick recipe for it:

  • 1 Cup Sugar
  • 10 Tablespoons Butter, unsalted
  • ⅔ Cup Unsweetened Cocoa Powder
  • 1 Teaspoon Vanilla Extract
  • ¾ Teaspoon Salt
  • 2 Large Eggs
  • ½ Cup All Purpose Flour
  • ½ Cup Mini Chocolate Chips

Add the butter to a medium saucepan and melt over medium heat, then stir in the sugar, cocoa powder, vanilla and salt. Allow to cool for 5 minutes then add the eggs while stirring. Then add the flour and the chocolate chips. Spoon into the mini muffin pan, and cook the same as in below recipe.

How to store leftovers

Once the brownies have cooled store in an airtight container at room temperature for up to 1 week.

They actually do freeze well. Store in a freezer safe container for up to 3 months.

Mel's kitchen notes

Add a pinch of espresso powder to your brownie batter it will add a certain depth of flavor that is wonderful.

Can you make brownie bites with box mix?

Why do you think I made this recipe? Most definitely you can. You just have to adjust a little for the time needed for a smaller brownie bite.

How long do brownie bites take to cook?

10 minutes works perfectly for me, it makes perfect fudgy brownie bites.

How do you keep brownie bites from sticking to the pan?

I found giving the pan a spray with cooking spray (butter) works fine. They come loose with no problem. I give the brownie a little twist to get it moving before trying to pull out. You can use the help of a plastic fork to help get them out too.

Equipment

  • Glass Mixing Bowls
  • Mini Muffin Pan
  • Triple Chunk Supreme Brownie Mix

Ingredients

  • 1 (18 Ounce) Box Brownie Mix
  • 2 Each Large Eggs
  • ½ Cup Vegetable Oil
  • ¼ Cup Water

Instructions

  • Preheat oven to 350°F.
  • Lightly grease a mini cupcake pan with cooking spray.
  • In a medium mixing bowl add the brownie mix, eggs, water and oil and stir slowly and carefully so as not to overmix.
    1 (18 Ounce) Box Brownie Mix, 2 Each Large Eggs, ½ Cup Vegetable Oil, ¼ Cup Water
  • Spoon the brownie batter into each tiny well, filling only about ⅔ full.
  • Put the baking pan straight into the oven and bake for 10 minutes only.
  • Remove and allow to cool completely in the cupcake pan.

Notes

I love to whip these together when my kids have friends over. They're usually so impressed and assume they're made from scratch. I try to go for the fudgy brownie mix.

    Just wanted to comment that these turned out great for me. I was able to get 3 dozen bites out of one box and the listed ingredients. I was hesitant to make them based on one of the comments but am so glad I did. I'm baking for our church this weekend and wanted something quick and easy to grab from the trays that wasn't just a cookie. I made sure to spray the pan down really good and they came out smoothly for me. I used a grape seed oil spray that isn't always the best for nonstick but it did the job. Holding onto this recipe for future uses!

    The brownies tasted great! I had some difficulty removing the brownies from my Pampered Chef mini muffin pan. I sprayed with baking spray and wiped out excess with paper towel. I think part of the sticking issue, for me, was too much mix in each cup. The second batch released from the pan much easier. I allowed them to cool in pan for 20+ minutes, ran a knife around the edge and they came out perfectly.
