Slow Cooker Roast Potatoes

These Slow Cooker Roast Potatoes are super simple and a great way to fix and leave them while you make the rest of the meal.

Ingredients

  • 8 Medium-Large Gold Potatoes
  • 2 Tablespoons Olive Oil
  • 2 Tablespoons Butter unsalted, melted
  • ½ teaspoon Salt
  • ½ teaspoon Pepper
  • ½ teaspoon Garlic Powder
  • ¼ Cup Parmesan Cheese freshly grated
  • Pinch Coarse Salt
  • 2 Tablespoons Fresh Parsley chopped

Instructions

  • Peel and cut the potatoes into 2-3" Pieces.
  • Place the potatoes in a bowl with the olive oil, melted butter, garlic powder, salt and pepper. Mix well using your hands.
  • Add the potatoes to a large slow cooker (7 quart).
  • Cover and cook on high for 4 hours (or low for 6 hours). Stir up the potatoes half way through.
  • At the end, sprinkle fresh parmesan, a sprinkling of coarse salt and chopped parsley.

Notes

Depending on your slow cooker, if you don't get much color to your potatoes, after they are cooked, load onto a baking sheet and place in the oven at 450-500°F, just to get a quick "roasting color".
