Apple pie cake is a perfect combination of apple pie and pound cake. The two combine to make an unbelievable apple pie cake that, served warm with some vanilla ice cream and caramel drizzle is a plate full of heaven.
Preheat oven to 350°F and grease a 13x9" baking dish with cooking spray.
Add yellow cake mix to the bowl of your stand mixer, with the water, oil and eggs and mix together for 2 minutes.
Pour into the greased baking dish.
Peel, core and cut the apples into small chunks.
Add the apple chunks to a mixing bowl with the lemon juice, granulated sugar and apple pie spice. Mix together evenly so all the apple chunks are coated.
Layer over the top of the yellow cake mixture in the baking dish.
In another mixing bowl, add the flour, sugar and salt and mix together.
Cut the butter into the flour mixture, or rub in using your fingers until you have breadcrumb size pieces.
Sprinkle over the top of the apple chunks, evenly.
Place in the oven and bake for 45-60 minutes, checking with a toothpick in the center if it's ready. There shouldn't be more than 2 crumbs on the toothpick when removing.
Allow to cool completely then sprinkle with the powdered sugar.
Notes
If you'd rather keep it simple, you could use brown sugar throughout and skip the granulated sugar.I like to use both tart and sweet apples to give a good flavor packed bite.
