This apple pie cake has a delicious cake texture, with an apple pie filling scattered through out, topped with a streusel like crumb. It's an easy cake recipe pulling on a classic to take it over the edge.

Apple pie tends to be more a summer or fall dessert, but making an apple pie cake like this it is fitting year round.
It reminds me of a cross between an apple cobbler, apple crisp and apple pie - all rolled into one.

Recipe walkthrough: Instructions

- Step 1: Add the yellow cake mix, eggs, water and oil to the bowl of a stand mixer and mix for two minutes on medium speed with the paddle attachment.
- Step 2: Pour into a greased 13x9" baking dish.
- Step 3: Peel, core and chop the apples into chunks.
- Step 4: Add to a mixing bowl with the sugar, lemon juice and apple pie spice.

- Step 5: Layer these apple chunks over the top of the yellow cake mix.
- Step 6: In another mixing bowl, add the flour, brown sugar an salt and mix. Then cut in the butter into the flour mixture.
- Step 7: Sprinkle over the top of the apple chunks, evenly.
- Step 8: Bake in a preheated oven for 45-55 minutes, allow to cool completely, then dust with a sprinkling of powdered sugar.
Hint: Using a combination of both tart apples (granny smith) and sweet (honeycrisp) will add a wonderful combination of sweet and tart that your palate will thank you for.
Recipe variations and substitute ideas
- Spices - if you don't have apple pie spice you could make your own with a combination of cinnamon, nutmeg and allspice.
- Vanilla Extract - you could add a touch to the apple chunks, but it's not necessary.
- Soda - sometimes people like to use soda in their cake recipe, instead of water.

How to store leftovers
Once the Apple Pie Cake has cooled completely, store in an airtight container in the refrigerator for up to 1 week.
This cake will freeze well. Store in a freezer safe container for up to 3 months.

Ingredients
- 1 (13.5 Ounce) Box Yellow Cake Mix
- 1 Cup Water
- ½ Cup Vegetable Oil
- 3 Each Large Eggs
- 2 Each Granny Smith Apples Tart
- 2 Each Honey Crisp Apples Sweet
- 2 teaspoons Apple Pie Spice
- 1 Tablespoon Lemon Juice
- 3 Tablespoons Granulated Sugar
- ¾ Cup All Purpose Flour
- ½ Cup Light Brown Sugar
- ¼ teaspoon Salt
- ½ Cup Unsalted Butter
- ¼ Cup Powdered Sugar for dusting
Instructions
- Preheat oven to 350°F and grease a 13x9" baking dish with cooking spray.
- Add yellow cake mix to the bowl of your stand mixer, with the water, oil and eggs and mix together for 2 minutes.1 (13.5 Ounce) Box Yellow Cake Mix, 1 Cup Water, ½ Cup Vegetable Oil, 3 Each Large Eggs
- Pour into the greased baking dish.
- Peel, core and cut the apples into small chunks.2 Each Granny Smith Apples, 2 Each Honey Crisp Apples
- Add the apple chunks to a mixing bowl with the lemon juice, granulated sugar and apple pie spice. Mix together evenly so all the apple chunks are coated.2 teaspoons Apple Pie Spice, 1 Tablespoon Lemon Juice, 3 Tablespoons Granulated Sugar
- Layer over the top of the yellow cake mixture in the baking dish.
- In another mixing bowl, add the flour, sugar and salt and mix together.¾ Cup All Purpose Flour, ½ Cup Light Brown Sugar, ¼ teaspoon Salt
- Cut the butter into the flour mixture, or rub in using your fingers until you have breadcrumb size pieces.½ Cup Unsalted Butter
- Sprinkle over the top of the apple chunks, evenly.
- Place in the oven and bake for 45-60 minutes, checking with a toothpick in the center if it's ready. There shouldn't be more than 2 crumbs on the toothpick when removing.
- Allow to cool completely then sprinkle with the powdered sugar.¼ Cup Powdered Sugar
