Deliciously crispy outside and soft and tender inside this Cajun fish fry is the best fried fish you'll ever make. A fish fry is something of an art and Cajuns sure know how to cook.
Drop your fish into the mustard mixture and allow to sit for about 15 minutes.
When you're ready to fry, (the temperature of the oil should be 350°F) take some of the fish out of the mustard and drop into the fish fry mixture, to coat completely.
Drop into the hot oil and fry for about 3-4 minutes. Remove and allow to drain on some paper towels.
Rrepeat with the remaining fish.
Notes
The longer the fish can sit in the mustard, the better. Allow to sit up to an hour at room temperature.
