Crispy Sweet Potatoes

Perfectly crispy sweet potatoes are easily made with minimal ingredients - crispy with the perfect spice blend.

Ingredients

  • 2 pounds of sweet potatoes thinly sliced into ¼-inch sticks
  • 1 tablespoon cornstarch
  • 1 teaspoon kosher salt
  • 2 tablespoons olive oil
  • ½ teaspoon garlic powder
  • ½ teaspoon black pepper
  • ½ teaspoon cayenne pepper

Instructions

  • Preheat the oven to 425 degrees Fahrenheit.  Line two baking sheets with parchment paper and set them aside.
  • Using a sharp kitchen knife, cut sweet potatoes into even sticks, about ¼ inch each.
  • In a large bowl sprinkle cornstarch and kosher salt on top of the fries, mix well, and make sure to coat each fry.
  • Divide fries evenly between the two baking sheets and spread evenly.  It is important not to overcrowd the baking sheet if you want crispy fries.
  • Drizzle each baking sheet with 1 tablespoon of oil Coat fries with oil, be sure that no cornstarch spots remain.
  • Bake fries for 10-12 minutes rotate the pan position and flip the fries and continue baking for another 10-12 minutes.
  • While baking, combine garlic powder, black pepper, and cayenne pepper in a small bowl and mix.
  • Fries are done when the outside turns from a shiny wet orange color to a more matte orange.
  • Remove from oven and sprinkle with spice mixture, toss to coat fries in seasoning.

Notes

Make sure there is enough room between sweet potato fries.
