Crispy Sweet Potatoes

Crispy sweet potatoes are surprisingly easy to make. A perfect crunch with a light dusting of a slightly spicy seasoning blend. Paired with your favorite dipping sauce these sweet potato fries are the best.

What makes this recipe so yummy

  • Of course, the fact that sweet potatoes are a little healthier than their white cousins.
  • Sweet potatoes can be seasoned in a number of ways. You could sweeten them, or add some slight spice like I did in this recipe.
  • These crispy roasted sweet potatoes make the perfect side dish for any meal.

Sweet Potatoes cut into sticks with a knife.
Step 1: Preheat the oven to 425 degrees Fahrenheit. Line two baking sheets with parchment paper and set them aside.
Using a sharp kitchen knife, cut sweet potatoes into even sticks, about ¼ inch each.

Step 2: In a large bowl sprinkle cornstarch and kosher salt on top of the fries, mix well, and make sure to coat each fry.

Step 3: Divide fries evenly, in a single layer, between the two baking sheets and spread evenly. It is important not to overcrowd the baking sheet if you want crispy fries.

Step 4: Drizzle each baking sheet with 1 tablespoon of oil Coat fries with oil, be sure that no cornstarch spots remain.
Bake fries for 10-12 minutes rotate the pan position and flip the fries and continue baking for another 10-12 minutes.

Step 5: While baking, combine garlic powder, black pepper, and cayenne pepper in a small bowl and mix.
Fries are done when the outside turns from a shiny wet orange color to a more matte orange.
Step 6: Remove from oven and sprinkle with spice mix, toss to coat fries in seasoning.

Hint: It's extra important to space the sweet potato fries out enough for good air to circulate. If they're too close together they will cook in their own steam and will not become as crispy.

Recipe variations and substitute ideas

  • Regular Potatoes - you can use this same recipe and sub out the sweet potatoes for regular white potatoes.
  • Chili Powder - use this instead of the cayenne for a little spice.
  • Sweet Potato Chunks - cut the potatoes into chunks instead of fries.
  • Avocado Oil - use this instead of olive oil (or any oil for that matter, as long as it has a high smoking point).
  • Fresh Garlic - instead of garlic powder.
  • Fresh Thyme - sprinkle some fresh thyme.
  • Seasoning Mixture - this is very flexible. You could make the fries more sweet than spicy (add a little brown sugar). It's all up to you.

How to store leftovers

These crispy sweet potato fries can be stored in an airtight container, lined with paper towel, in the refrigerator for about 3 days.

To reheat these fries I recommend doing so in the oven again, to crisp them up. Even better - in the air fryer if you have one.

Can I make this ahead of time and freeze it?

I would not recommend freezing these. 
You can peel and cut the sweet potatoes two days in advance.  Just keep them in a bowl of water to prevent browning.


Why are my sweet potato fries soggy?

It is important not to overcrowd the pan when baking.  If your pan is too crowded the sweet potato fries will steam and will not become crispy.

  • ½ teaspoon Black Pepper
  • ½ teaspoon Cayenne Pepper

Make sure there is enough room between sweet potato fries.
