This easy and delicious broccoli casserole recipe is a favorite side dish among families. With just a few simple ingredients, you can have a hearty and satisfying dish on the table in no time.

Naturally, a Broccoli Casserole is going to be popular as a holiday side dish, but it's a great recipe all year.

I am one of those that love to eat a good roast on a Sunday and this as a side makes the perfect Sunday roast pair.

What makes this recipe yummy

I love the incorporation of the cornbread stuffing mix to this casserole, the bread element binds the other ingredients well, plus it lends great flavor.

Broccoli Casserole Recipe Instructions

This is an overview of the recipe steps. For more detailed instructions visit the recipe card at the bottom of this post.

Step 1: Steam the fresh broccoli for 5 minutes, then season with salt and pepper.
Cornbread stuffing mix soaking in a mixing bowl, with milk and a fork.
Step 2: While the broccoli is steaming, soak the cornbread stuffing mix in milk.
A large mixing bowl filled with stuffing mix, eggs, onions, seasonings, mayo and cheese, with a fork about to stir together.
Step 3: Mix together the mushroom soup, mayo, eggs, cheese, onions, melted butter, seasoning and the soaked stuffing mix. Stir well.

Step 4: Add the steamed broccoli and stir again.

Step 5: Pour the broccoli mixture into an 11x7" baking dish sprayed with cooking spray.

Step 6: Top with the remaining grated cheese and crushed cracker crumbs.
Step 7: Bake for 30-40 minutes until all the edges are bubbly.

Hint: If you don't have the stuffing mix you could crush more ritz crackers and add that to the mixture instead.

Recipe variations and substitute ideas

  • Frozen Broccoli - instead of fresh. You may not need to steam as long.
  • Chicken - many people like to add some cooked chicken to make this a one dish meal. Chicken and Broccoli Casserole.
  • Cayenne Pepper - to add a little heat.
  • Garlic Powder - for more flavor.
  • Turkey - if you have some leftover roast turkey you could incorporate into this dish.

Necessary gear: equipment

You'll need a large mixing bowl, a pot to steam your broccoli (as well as a steam basket). If you don't have one of these you could perhaps boil the broccoli for just 5 minutes instead.

I only needed an 11x7" baking dish. You can feel it out. If you think you have enough of a mixture you could use a 13x9" dish.

How to store leftovers

Store the broccoli casserole leftovers in an airtight container in the refrigerator for up to 4 days.

This recipe will actually freeze well. Store in a freezer safe container for up to 6 months.

  • 1 4.5 Quart Pot
  • 1 Baking Dish (11"x7")
  • 1 Vegetable Steaming Basket

Ingredients

  • 6 Cups Broccoli Fresh, florets
  • ½ teaspoon Salt
  • ¼ teaspoon Black Pepper
  • ½ Cup Cornbread Stuffing Mix
  • ½ Cup Milk
  • 1 Cup Mayonnaise
  • ¼ Cup Unsalted Butter melted
  • 2 Each Large Eggs
  • 1 (10.5 Ounce) Can Cream of Mushroom Soup
  • ½ Each Yellow Onion diced
  • ½ teaspoon Cajun Seasoning
  • 1-½ Cups Sharp Cheddar Cheese divided
  • ¼ Cup Ritz Crackers crushed

Instructions

  • Preheat oven to 350°F.
  • Place the broccoli florets in a steaming basket in a pot with 1" water and steam for about 5 minutes. Once finished remove the lid and season with salt and pepper.
    6 Cups Broccoli, ½ teaspoon Salt, ¼ teaspoon Black Pepper
  • While the broccoli is steaming, add the Stuffing Mix to a bowl with the Milk. Allow to sit and soak for 10 minutes.
    ½ Cup Cornbread Stuffing Mix, ½ Cup Milk
  • In a large bowl, add the Mayonnaise, Melted Butter (cooled), Eggs, diced onion, grated cheddar cheese, Cajun seasoning and the can of mushroom soup, along with the soaked stuffing mix. Use a spoon and mix well.
    1 Cup Mayonnaise, ¼ Cup Unsalted Butter, 2 Each Large Eggs, 1 (10.5 Ounce) Can Cream of Mushroom Soup, ½ Each Yellow Onion, ½ teaspoon Cajun Seasoning
  • Stir in the steamed broccoli.
  • Add this broccoli mixture to an 11x7" baking dish that has been sprayed with cooking oil.
  • Sprinkle the remaining ½ Cup Grated cheese on top evenly, then sprinkle the Crushed Ritz Crackers.
    1-½ Cups Sharp Cheddar Cheese, ¼ Cup Ritz Crackers
  • Bake in the oven for 30-40 minutes until the edges are nice and bubbly.
