Place the slices of bacon into a large skillet and cook until almost crispy. Remove the bacon onto paper towel lined plate but keep the grease.
Add the chopped cabbage, potatoes and garlic along with the seasonings to the skillet with the bacon drippings.
Give a good stir and cover with a lid. Cook about 25 minutes stirring occasionally.
Once cooked and the potatoes are fork tender chop the bacon into bite size pieces and add to the skillet with the rest of the dish.
Serve immediately.
Notes
I like to stir only a few times. Some of the pieces will become slightly caramelized on the bottom of the skillet and that's a good thing! Scrape it all up once done.
