Place the chicken thighs (well trimmed) into the slow cooker.
3 Pounds Chicken Thighs
In a medium mixing bowl, add the remaining ingredients (except the cornstarch, water and green onions). Mix together with a whisk.
1 Cup Light Brown Sugar, 1 Cup Soy Sauce, ⅓ Cup Bourbon Whisky, 2 Tablespoons Apple Cider Vinegar, ½ teaspoon Ground Ginger, 1 Tablespoon Honey, ½ teaspoon Red Pepper Flakes, 4 Cloves Garlic
Pour over the top of the chicken thighs.
Cover and cook on high for 4 hours, or low for 6 hours.
Remove the chicken thighs to a plate and roughly chop them.
Add the cornstarch and water to a mixing bowl and mix until cornstarch is dissolved.
3 Tablespoons Cornstarch, 2 Tablespoons Water
Pour into the sauce in the crock pot and mix with a whisk.
Add the chicken back to the sauce, stir to combine then cover again. Allow to come back to bubbling then turn off the crock pot.
Sprinkle with chopped green onions and serve over rice.

Ingredient Substitutions and variation ideas
Sesame Seeds - sprinkle with some toasted sesame seeds at the end if you like.
Apple Juice - this can replace the bourbon, if you want to exclude the alcohol.
Chicken Breast - you could cut up chicken breast into 1" cubes if you prefer, instead of the thighs.
