Savory Dirty Rice

Savory dirty rice, a classic from Louisiana, is a one pot meal full of sausage meat, ground beef, rice and Cajun seasonings.

Ingredients

  • 1 Pound Ground Pork Sausage like breakfast sausage
  • 1 Pound Ground Beef or venison (like I make)
  • 3 Slices Bacon chopped
  • 2 Each Yellow Onions diced
  • 2 Ribs Celery diced
  • 1 Each Green Bell Pepper deseeded and diced
  • 4 Cloves Garlic minced
  • 6 Cups Low Sodium Chicken Broth
  • 1 Tablespoon Cajun Seasoning
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1-½ Cups Long Grain Rice uncooked long grain
  • ¼ Cup Green Onions chopped

Instructions

  • Add the ground meat and sausage to a large heavy bottomed pot and heat over medium-high heat. Cook until no pink remains then remove the meat to the side and discard of the fluid.
    1 Pound Ground Pork Sausage, 1 Pound Ground Beef
  • Add the bacon to the same pot and cook until done, then remove but keep the grease.
    3 Slices Bacon
  • Cook the onions, celery and bell pepper in the bacon grease until soft, then add the garlic and cook a further 2 minutes.
    2 Each Yellow Onions, 2 Ribs Celery, 1 Each Green Bell Pepper, 4 Cloves Garlic
  • Add the chicken broth and seasonings, stir then cover and allow to slow boil over medium-low heat for 20 minutes.
    6 Cups Low Sodium Chicken Broth, 1 Tablespoon Cajun Seasoning, 1 teaspoon Garlic Powder, 1 teaspoon Onion Powder
  • Add the meat back to the pot along with the uncooked rice, stir and cover again. Simmer for 15 minutes.
    1-½ Cups Long Grain Rice
  • Remove the lid, stir and sprinkle with green onions.
    ¼ Cup Green Onions

Notes

The sausage meat and the Cajun seasoning will give the dirty rice a little kick. If you like less spice you might want to reduce the amount of Cajun seasoning, or maybe even use an season-all type blend instead.
