Add chopped bacon, green bell pepper, onion and celery to a large pot and cook until soft.

Add garlic to the large Dutch oven and cook another 2 minutes.

Brown pork, chicken and smoked sausage for a few minutes over medium-high heat - scrape the bottom of the pot so it doesn't burn.

Add Creole seasoning, Rotel and Thyme.

Next add the chicken soup, mushroom soup and the chicken broth. Give a good stir to combine.

Add dry pasta and stir carefully into the mixture.

Carefully push down on the top to ensure the pasta is covered.

Cover the pot and place in a preheated oven for 1 hour. After 1 hour remove from the oven but don't lift the lid for 10 minutes.

Give a good stir and sprinkle with the chopped green onions.

Serve immediately with some crusty bread.

Delicious Pastalaya cooked like a Cajun.
