Bananas Foster Cookies

Heavenly Bananas Foster Cookies are a take on the famous New Orleans Bananas Foster Dessert.

  • ½ Cup Unsalted Butter softened
  • 1 Cup Light Brown Sugar
  • 2 Each Large Eggs
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Spiced Dark Rum
  • 2 Each Bananas mashed
  • 2 Cups All Purpose Flour
  • 1-½ teaspoons Baking Soda
  • 2 teaspoons Corn Starch
  • 1 teaspoon Salt
  • 1-½ Cups Chocolate Chips

Rum Butter Icing

  • 3 Tablespoons Unsalted Butter
  • 1 Cup Light Brown Sugar
  • ¼ Cup Half and Half
  • 1 teaspoon Spiced Dark Rum
  • 1 teaspoon Creme de Banane
  • 1 Cup Powdered Sugar

Instructions

  • Preheat your oven to 350°F and line a cookie sheet with parchment paper.
  • In the bowl of your stand mixer add ½ Cup Butter and 1 cup Light brown sugar. Mix with the paddle attachment until creamy.

  • Add the eggs, vanilla and rum and mix again until incorporated.
    2 Each Large Eggs, 1 teaspoon Vanilla Extract, 1 teaspoon Spiced Dark Rum
  • Add the mashed bananas and mix again.

  • In a medium mixing bowl add the flour, baking soda, corn starch and salt and mix together. Pour this slowly into the wet ingredients.
    2 Cups All Purpose Flour, 1-½ teaspoons Baking Soda, 2 teaspoons Corn Starch, 1 teaspoon Salt
  • Don't overmix. Once the cookie dough has just about mixed enough turn off your stand mixer and add the white chocolate chips. Fold in using a spatula.
    1-½ Cups Chocolate Chips
  • Using a large cookie scoop, scoop out onto your cookie sheet, ensuring at least 2" between scoops.
  • Bake in the preheated oven for 10 minutes, or more depending on your oven. Just until the edges start to lightly brown.
  • In the meantime, add the butter, brown sugar and half n half to a small pot on the stove.
    3 Tablespoons Unsalted Butter, 1 Cup Light Brown Sugar, ¼ Cup Half and Half
  • Heat until bubbling, then allow to boil for 2 minutes.
  • Turn off the heat and add the rum, creme de banane and powdered sugar.
    1 teaspoon Spiced Dark Rum, 1 teaspoon Creme de Banane, 1 Cup Powdered Sugar
  • Mix well with a whisk. As it cools it will thicken.
  • Remove the cookies from the oven and allow to cool on a cooling rack, then drizzle the prepared icing over the top of the cookies.

Notes

You don't have to add the rum, or the creme de banane if you don't like to use alcohol, or can't get any. Use vanilla in its place.
