This recipe is a tasty treat based on the New Orleans famous dessert. Bananas Foster Cookies are super easy to make and taste just like the southern classic.

We're lucky here in South Louisiana, as Bananas are imported through New Orleans (which is one of the reasons that Bananas Foster was created).

Ingredients needed to make bananas foster cookies.
  • Unsalted Butter
  • Brown Sugar
  • Vanilla Extract
  • Eggs
  • All Purpose Flour
  • White Chocolate Chips
  • Creme de Banane
  • Rum
  • Half n Half
  • Fresh Banana
  • Corn Starch
  • Salt
  • Baking Soda

Recipe walkthrough: Instructions

  • Step 1: Cream the butter and brown sugar together for 5 minutes.
  • Step 2: Add the eggs, vanilla and dark rum and mix again.
  • Step 3: Add mashed bananas, mix well.
  • Step 4: Mix the flour, baking soda and salt together, then add to the banana mixture.

  • Step 5: Fold in the white chocolate chips.
  • Step 6: Using a large cookie scoop, scoop out onto a baking sheet lined with parchment paper. Ensure 2" between each scoop. Bake for 10-12 minutes.
  • Step 7: Mix together the ingredients for the icing.
  • Step 8: Remove cookies and allow to cool on a wire rack before drizzling the icing over the cookies.

Hint: Older more ripe bananas will be a lot more sweeter and give a better taste in your cookies.

Recipe variations and substitute ideas

  • Rum Extract - instead of the liquor.
  • Cream Cheese Frosting - this would be good.
  • Ground Cinnamon - you could add a teaspoon cinnamon.
  • Caramel Sauce - make a cup caramel sauce to drizzle, instead.

Storage

Once the cookies have been iced and they're cool, store in an airtight container at room temperature for 1 week.

Mel's kitchen notes

Decant the icing into a squeeze bottle to be able to get the pretty drizzle. Using a spoon works, but is not always as pretty. Or a piping bag.

  • Wilton Stainless Steel Small Cookie Scoop, Silver
  • Glass Mixing Bowls
  • Stand Mixer

Ingredients

  • ½ Cup Unsalted Butter softened
  • 1 Cup Light Brown Sugar
  • 2 Each Large Eggs
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Spiced Dark Rum
  • 2 Each Bananas mashed
  • 2 Cups All Purpose Flour
  • 1-½ teaspoons Baking Soda
  • 2 teaspoons Corn Starch
  • 1 teaspoon Salt
  • 1-½ Cups Chocolate Chips

Rum Butter Icing

  • 3 Tablespoons Unsalted Butter
  • 1 Cup Light Brown Sugar
  • ¼ Cup Half and Half
  • 1 teaspoon Spiced Dark Rum
  • 1 teaspoon Creme de Banane
  • 1 Cup Powdered Sugar

Instructions

  • Preheat your oven to 350°F and line a cookie sheet with parchment paper.
  • In the bowl of your stand mixer add ½ Cup Butter and 1 cup Light brown sugar. Mix with the paddle attachment until creamy.
    ½ Cup Unsalted Butter, 1 Cup Light Brown Sugar
  • Add the eggs, vanilla and rum and mix again until incorporated.
    2 Each Large Eggs, 1 teaspoon Vanilla Extract, 1 teaspoon Spiced Dark Rum
  • Add the mashed bananas and mix again.
    2 Each Bananas
  • In a medium mixing bowl add the flour, baking soda, corn starch and salt and mix together. Pour this slowly into the wet ingredients.
    2 Cups All Purpose Flour, 1-½ teaspoons Baking Soda, 2 teaspoons Corn Starch, 1 teaspoon Salt
  • Don't overmix. Once the cookie dough has just about mixed enough turn off your stand mixer and add the white chocolate chips. Fold in using a spatula.
    1-½ Cups Chocolate Chips
  • Using a large cookie scoop, scoop out onto your cookie sheet, ensuring at least 2" between scoops.
  • Bake in the preheated oven for 10 minutes, or more depending on your oven. Just until the edges start to lightly brown.
  • In the meantime, add the butter, brown sugar and half n half to a small pot on the stove.
    3 Tablespoons Unsalted Butter, 1 Cup Light Brown Sugar, ¼ Cup Half and Half
  • Heat until bubbling, then allow to boil for 2 minutes.
  • Turn off the heat and add the rum, creme de banane and powdered sugar.
    1 teaspoon Spiced Dark Rum, 1 teaspoon Creme de Banane, 1 Cup Powdered Sugar
  • Mix well with a whisk. As it cools it will thicken.
  • Remove the cookies from the oven and allow to cool on a cooling rack, then drizzle the prepared icing over the top of the cookies.

Notes

You don't have to add the rum, or the creme de banane if you don't like to use alcohol, or can't get any. Use vanilla in its place.
