This recipe is a tasty treat based on the New Orleans famous dessert. Bananas Foster Cookies are super easy to make and taste just like the southern classic.
We're lucky here in South Louisiana, as Bananas are imported through New Orleans (which is one of the reasons that Bananas Foster was created).
This means we 99% of the time have an abundance of bananas year round. We can make Bananas Foster Cookies any time, yay.

Recipe variations and substitute ideas
- Rum Extract - instead of the liquor.
- Cream Cheese Frosting - this would be good.
- Ground Cinnamon - you could add a teaspoon cinnamon.
- Caramel Sauce - make a cup caramel sauce to drizzle, instead.

I like to use my stand mixer for everything I bake. I also used a baking sheet and large cookie scoop.

Storage
Once the cookies have been iced and they're cool, store in an airtight container at room temperature for 1 week.
Mel's kitchen notes
Decant the icing into a squeeze bottle to be able to get the pretty drizzle. Using a spoon works, but is not always as pretty. Or a piping bag.

Rum Butter Icing
- 3 Tablespoons Unsalted Butter
- 1 Cup Light Brown Sugar
- ¼ Cup Half and Half
- 1 teaspoons Spiced Dark Rum
- 1 teaspoons Creme de Banane
- 1 Cup Powdered Sugar
Instructions

- In the bowl of your stand mixer add ½ Cup Butter and 1 cup Light brown sugar. Mix with the paddle attachment until creamy.

- In the meantime, add the butter, brown sugar and half n half to a small pot on the stove.
- Heat until bubbling, then allow to boil for 2 minutes.
- Turn off the heat and add the rum, creme de banane and powdered sugar.
- Mix well with a whisk. As it cools it will thicken.
- Remove the cookies from the oven and allow to cool on a cooling rack, then drizzle the prepared icing over the top of the cookies.
