Add all ingredients to a small bowl and mix with a whisk, or add to a small sealable bag and shake to mix.
3 Tablespoons Light Brown Sugar, 2 Tablespoons Smoked Paprika, 1 teaspoon Dried Rosemary, 1 teaspoon Dried Thyme, 1 teaspoon Mustard Powder, 2 Tablespoons Kosher Salt, 1 Tablespoons Black Pepper, 1 Tablespoons Garlic Powder, 1 Tablespoons Onion Powder, ½ teaspoon Rubbed Sage, ½ teaspoon Baking Powder, ½ teaspoon Celery Salt
Rub all over turkey before smoking.
Notes
Rub the turkey down then allow to sit at room temperature for a couple of hours. The seasoning will sink in a little more and the turkey won't go onto the smoker so cold.
