Mel's kitchen notes

Expert Tip: Next time, make a large batch and to store it, add a little corn starch. It will help avoid clumping.

Frequently asked questions: FAQs

Why is my smoked turkey skin rubbery?

This is common when smoking a turkey - this is why I like to add baking powder - the end result is amazing flavor and crispy skin on the best turkey you ever ate.

Will this homemade spice rub be used with the air fryer?

Definitely, why not. Try with your chicken wings next time.

Instructions

  • Add all ingredients to a small bowl and mix with a whisk, or add to a small sealable bag and shake to mix.
3 Tablespoons Light Brown Sugar, 2 Tablespoons Smoked Paprika, 1 teaspoon Dried Rosemary, 1 teaspoon Dried Thyme, 1 teaspoon Mustard Powder, 2 Tablespoons Kosher Salt, 1 Tablespoons Black Pepper, 1 Tablespoons Garlic Powder, 1 Tablespoons Onion Powder, ½ teaspoon Rubbed Sage, ½ teaspoon Baking Powder, ½ teaspoon Celery Salt
