- Step 1: Add all spice ingredients to a mixing bowl (or resealable bag) and mix with whisk (or give a good shake).
- Step 2: Pat your turkey dry with paper towels.
- Step 3: 'Rub' the seasoning mix all over the whole turkey (including wings and turkey legs) until no rub remains.
- Step 4: For best results, allow the turkey to sit with the turkey seasoning at room temperature for an hour or two, before putting on the smoker.

Hint: If you like more heat, add some Cayenne Pepper to the dry rub recipe.
Recipe variations and substitute ideas
- Olive Oil - rub all over, or vegetable oil, for a wet rub.
- Melted Butter - as above.
- Table Salt - will suffice.

- 1 teaspoon Dried Thyme
- 1 teaspoon Mustard Powder
