This smoked bacon wrapped shrimp recipe is a super easy and deliciously addictive smoker recipe for beginners. The flavors of the shrimp, bacon and barbecue sauce marinate together perfectly with the smokiness of the wood chips.

We like to fire up the grill (smoker) every weekend when football season starts. We like that smoking things can be a little slower, it's perfect for game day.

Everyone can pick at the delicious items coming off the grill while having fun and socializing. It's a delicious finger food for any occasion.

Ingredients needed to make smoked bacon wrapped shrimp.
  • Large Jumbo Shrimp
  • Thin cut Bacon slices
  • Barbecue Sauce
  • Salt and Black Pepper

Recipe walkthrough: Instructions

This is an overview of the recipe steps. For more detailed instructions visit the recipe card at the bottom of this post.

  • Step 1: Pat dry with paper towels then season the deveined shrimp with salt and pepper then partially cook the bacon strips.
  • Step 2: Wrap each shrimp in a piece of bacon and hold in place with individual toothpicks and line up on a baking sheet.
  • Step 3: Place shrimp on a preheated smoker on the directly on the grill grate for 30 minutes, turning half way and brushing lightly with bbq sauce.

Hint: I like to par-cook the tasty bacon so that it gets nice and crispy without overcooking the shrimp. Then, the bacon crispy should be a good indicator of readiness.

Recipe variations and substitute ideas

  • Brown Sugar - Can be used in place of barbecue sauce.
  • Lime Juice - Try soaking the shrimp for 5 minutes before wrapping in bacon.
  • Garlic Butter - Brush a little garlic butter instead of the bbq sauce.
  • Chili Powder - Sprinkle a little chili powder with the salt and pepper to add a little spice.
  • Pineapple Chunks - Serve with pinapple chunks for a delicious taste explosion.
  • Onion Powder - Sprinkle a little onion powder with the salt and pepper.
  • Spicy - Add some spicy flavor by dropping a little hot sauce into the barbecue sauce.
  • Pineapple Juice - Soak the shrimp in pineapple juice before wrapping in bacon.
  • Monterey Jack Cheese - Tuck a little piece of cheese inside with the shrimp.
  • Smoker Pellets (chips) - the kind of pellets you choose is your preference. We like hickory and mesquite. Use your favorite wood chips.
  • Favorite Dipping Sauce - add a bowl when serving.
  • Wooden Skewer - you could also line up a few on one wooden skewer.
  • Soy Sauce - try brushing with a little instead of the barbecue sauce.
  • Paprika - tastes great with anything smoked.

How to store leftovers

After the bacon wrapped shrimp has cooled completely (I'm amazed you have any left) - Place in an airtight container and refrigerate for up to 3 days.

Mel's kitchen notes

Don't brush the barbecue sauce too early or it might cause early burning. Also, don't use too much barbecue sauce, you want to taste the shrimp. It should just be a light brush.

What size shrimp should I use?

Extra large shrimp will be the best for this recipe. The largest shrimp you can get.

Should I line the grill with aluminum foil first?

I don't. I like for the smoke to penetrate from all around.

What wood to smoke shrimp?

Hickory is great, or cherry. There are lots of different flavors, it's a personal preference I guess. There's also a mixed blend if you can't make your mind up.

Equipment

  • BEAR MOUNTAIN Premium Hickory Pellets, 40 lbs
  • PIT BOSS Wood Pellet Grill, 820 Square Inches

Ingredients

  • 1 Pound Large Shrimp peeled and deveined
  • 1 Pound Bacon par-cooked
  • ¼ Cup Barbecue Sauce
  • Salt and Pepper To Taste

Instructions

  • Preheat smoker to 350°F.
  • Season the shrimp with salt and pepper to taste.
    1 Pound Large Shrimp, Salt and Pepper To Taste
  • Take the bacon and partially cook it to half way.
    1 Pound Bacon
  • Wrap each shrimp in the bacon and hold in place with a toothpick.
  • Place each shrimp on the smoker grill for 25-30 Minutes.
  • Brush lightly with barbecue sauce half way into the cooking time and turn over.
    ¼ Cup Barbecue Sauce

Notes

Partially cooking the bacon will allow it to become nice and crispy without overcooking the shrimp.
