Leftover Prime Rib French Dip

Easy to assemble and wonderfully flavorful, a leftover prime rib French dip sandwich is the best use of some wonderful leftovers.

Ingredients

  • 2 Tablespoons Prime Rib Drippings or butter
  • 2 Tablespoons All Purpose Flour
  • 3 Cups Beef Broth
  • ½ teaspoon Worcestershire Sauce
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • 1 Sprig Fresh Thyme or 1 teaspoon dried thyme
  • 3 Each Leftover Ribs from the prime rib roast (optional)
  • 4 Ounces Leftover Prime Rib thinly sliced
  • 2 Loaves French Bread
  • 4 Ounces Cheddar Cheese sliced

Instructions

  • Add the prime rib drippings (or butter) to a small/ medium saucepan and apply medium heat.
    2 Tablespoons Prime Rib Drippings
  • Add the flour and cook for about 3 minutes.
    2 Tablespoons All Purpose Flour
  • Slowly pour in the beef broth while constantly stirring.
    3 Cups Beef Broth
  • Add the Worcestershire Sauce, salt and pepper, thyme and ribs (if you have them). Cover and simmer for 30 minutes. Remove the ribs from the pot, as well as the thyme stalks.
    ½ teaspoon Worcestershire Sauce, 1 teaspoon Salt, ½ teaspoon Black Pepper, 1 Sprig Fresh Thyme, 3 Each Leftover Ribs
  • Slice each French loaf in half, length ways. Spread a little butter on each half then toast under a broiler.
    2 Loaves French Bread
  • Lay slices of cheese on one half and some thinly sliced prime rib roast on the other half. Place under the broiler again for a few minutes, until the cheese has melted.
    4 Ounces Leftover Prime Rib, 4 Ounces Cheddar Cheese
  • Close the sandwich and serve next to a bowl of the Au Jus gravy you made in the beginning steps, to dip into.

Notes

The au jus gravy made here is a starting point, if you prefer your gravy with more of a kick go ahead and season it up to your liking.
I used a medium cheddar in these sandwiches, you could use many different varieties to your liking.
