A fantastic use of leftovers, this tasty leftover prime rib French dip sandwich can be whipped up and served in 30 minutes. A perfect meal for the day after the holidays.
Despite its name, the French dip sandwich is an American meal. Likely called French due to the bread used.
Typically a thinly sliced roast beef is used, hence using your leftover Prime Rib is the perfect way to use it.

Making an au jus gravy from the drippings when you roasted the prime rib makes this dipping sauce heavenly.
Cook the ribs with the gravy too, for even more flavor.
Groceries you'll need: ingredients
- French Bread (or baguette)
- Cheddar Cheese
- Drippings
- Beef Broth (or beef stock)
- Ribs from your roast (optional)
- Worcestershire Sauce
- Fresh Thyme
- All Purpose Flour
- Salt
- Pepper
- Leftover Prime Rib

Recipe walkthrough: Instructions

- Step 1: Add the drippings to a saucepan and cook over medium heat until melted.
- Step 2: Add the flour and cook a few minutes.
- Step 3: Slowly add the beef broth, stirring constantly.
- Step 4: Add the ribs, thyme and seasonings, cover and cook for 30 minutes.
- Step 5: Toast your French Bread until golden brown.
- Step 6: Add sliced cheese on one half and sliced beef on the other. Grill again until cheese has melted.
- Step 7: Close sandwich and serve with the gravy on the side.
Hint: Using the ribs is not crucial, but it adds great extra flavor and depth to the homemade au jus.

- Hoagie Rolls - instead of French rolls.
- Cheese ideas - Swiss Cheese, Gruyere, Provolone....
- Caramelized Onions - who doesn't like this with their prime rib sandwich.
- Garlic - sprinkle a little garlic powder into the gravy.
- Rosemary - as well as the thyme.

How to store leftovers
It's best to not make the French dip sandwiches if you're unsure if it's eaten. Assemble as needed. They prime rib meat can always be stored in the refrigerator and the gravy reheated.

- 2 Tablespoons Prime Rib Drippings or butter
- 2 Tablespoons All Purpose Flour
- 3 Cups Beef Broth
- ½ teaspoon Worcestershire Sauce
- 1 teaspoon Salt
- ½ teaspoon Black Pepper
- 1 Sprig Fresh Thyme or 1 teaspoon dried thyme
- 3 Each Leftover Ribs from the prime rib roast (optional)
- 4 Ounces Leftover Prime Rib thinly sliced
- 2 Loaves French Bread
- 4 Ounces Cheddar Cheese sliced
Instructions
- Add the prime rib drippings (or butter) to a small/ medium saucepan and apply medium heat.2 Tablespoons Prime Rib Drippings
- Add the flour and cook for about 3 minutes.2 Tablespoons All Purpose Flour
- Slowly pour in the beef broth while constantly stirring.3 Cups Beef Broth
- Add the Worcestershire Sauce, salt and pepper, thyme and ribs (if you have them). Cover and simmer for 30 minutes. Remove the ribs from the pot, as well as the thyme stalks.½ teaspoon Worcestershire Sauce, 1 teaspoon Salt, ½ teaspoon Black Pepper, 1 Sprig Fresh Thyme, 3 Each Leftover Ribs
- Slice each French loaf in half, length ways. Spread a little butter on each half then toast under a broiler.2 Loaves French Bread
- Lay slices of cheese on one half and some thinly sliced prime rib roast on the other half. Place under the broiler again for a few minutes, until the cheese has melted.4 Ounces Leftover Prime Rib, 4 Ounces Cheddar Cheese
- Close the sandwich and serve next to a bowl of the Au Jus gravy you made in the beginning steps, to dip into.
