Lunch is usually light, not too big or you find yourself horizontal checking those eyelids!  Not such a bad thing after Thanksgiving or Christmas Lunch but day to day, it should be easy to fix and set you up just enough to get you to dinner time.  Our favorite lunch recipes are:
