What makes this recipe yummy
Using leftover roast beef on your sandwich makes for the best flavors. Those flavors that developed during cooking can't be matched.
I think the best thing about this idea is the fact that it can be made in a jiffy. Perfect for when you're trying to have a restful day after the holidays.

- French Bread
- Leftover Prime Rib Roast
- Unsalted Butter
- Sharp Cheddar
- Green Bell Pepper
- Yellow Onion
- Horseradish Sauce
- Salt and Pepper

Recipe walkthrough: Instructions
This is an overview of the recipe steps. For more detailed instructions visit the recipe card at the bottom of this post.

- Step 1: Cook the onion and peppers in butter and season with salt and pepper.
- Step 2: Butter the bread then toast under the broiler.
- Step 3: Layer the cheese on one side of the bread, then spread the sauce on the other side. Top with a slice of prime rib. Place under the broiler again until the cheese is nice and melty and the beef has warmed through again.
- Step 4: Top the beef with the cooked onions and peppers then close the sandwich while the cheese is still nice and melty.

Hint: Closing the sandwich quickly while the cheese is still hot and melty will ensure the cheese melty onto the other ingredients and keep the sandwich closed.
Recipe variations and substitute ideas
- Bread - instead of French bread, try a hoagie roll, or a nice ciabatta bread.
- Sauce - I like to use Arby's Horsey Sauce, it's a tasty creamy horseradish sauce - you could use a nice dijon mustard, sour cream or a simple mayonnaise.
- Vegetables - I use green bell peppers, mainly because that's what we have at home a lot. You could add mushrooms, garlic, sweet peppers, jalapeños, etc.
- Cheese - I use a simple sharp cheddar, but you cold use Swiss cheese, provolone cheese, pepper jack, mozzarella. Whichever you have on hand and is a favorite.
- Salad - add some salads if you wish, like a fresh arugula.

You're not really going to have leftovers of a leftover sandwich. Unless you make a gargantuan sandwich, lol. In the case, just wrap in plastic wrap and store in the refrigerator.

- 1 Each Large French Loaf cut in half
- 2 Tablespoons Unsalted Butter
Fillings Assembly
- 2 Tablespoons Unsalted Butter
- 1 Each Green Bell Pepper Sliced
- 1 Each Yellow Onion Sliced
- 1 teaspoon Salt
- ½ teaspoon Black Pepper
- 4 Ounces Sharp Cheddar Cheese Sliced
- 2 Tablespoons Horseradish Sauce I like Arby's Horsey Sauce
- 2 Slices Leftover Prime Rib
Instructions
- Take the large French loaf and cut in half to make two sandwiches. Then slice in half lengthways to open up the bread into a sandwich.1 Each Large French Loaf
- Spread butter over the bread and toast under the broiler until browned.2 Tablespoons Unsalted Butter
- Add another 2 Tablespoons of butter to a large skillet and add the sliced onions and peppers. Season with salt and pepper and cook until soft, about 5-8 minutes should do it.2 Tablespoons Unsalted Butter, 1 Each Green Bell Pepper, 1 Each Yellow Onion, 1 teaspoon Salt, ½ teaspoon Black Pepper
- While the onions and peppers are cooking, lay the cheese slices out on one side of the bread.4 Ounces Sharp Cheddar Cheese
- On the other side, spread some horseradish sauce (or your favorite sandwich spread). Then top with the leftover prime rib slices.2 Tablespoons Horseradish Sauce, 2 Slices Leftover Prime Rib
- Place the sandwich under the broiler again, until the cheese and totally melted and the prime rib slices are heated.
- Remove and spread the onions and peppers on top of the beef. Close the sandwich together while the cheese is still nice, hot and melty. Enjoy!
