A delicious sweet potato fritter recipe that is easy and super delicious. The flavors of ginger, cinnamon and all spice really bring these fritters up a level.
Grate the sweet potato into a large mixing bowl using the coarse side of a box grater.
3 Each Sweet Potatoes
Beat the eggs then add to the potatoes.
2 Each Large Eggs
Add the ginger, flour, cinnamon, all spice and salt. Mix well.
2 teaspoons Fresh Ginger, 1 Cup All Purpose Flour, 1 teaspoon Cinnamon, ¼ teaspoon All Spice, ½ teaspoon Salt
Add the peanut oil to a large skillet - it needs to be about ½" deep, and turn on heat.
Peanut Oil
Form small 3" Patties from the sweet potato mixture.
Once the peanut oil has heated to 350°F (if you don't have a thermometer you can check using a wooden spoon - if bubbles fizz around the wood then it's hot enough) drop half of the sweet potato fritters into the hot oil.
Press down slightly on the fritters if you need them flatter.
Cook for about 4-5 minutes on each side, this should bring them to having a beautiful golden brown color.
Remove from the hot oil to a tray lined with paper towel and repeat with the remaining sweet potato fritters.
Combine the mayonnaise, corn syrup and srirach sauce in a small dipping bowl and mix well.
1 Cup Mayonnaise, ¼ Cup Light Corn Syrup, 2 teaspoons Sriracha Sauce
Serve the fritters next to the sweet and spicy dip.
