I've always loved making my own pot roast seasoning recipe. It is a homemade version of those McCormick packets you can get - only better. At least you know what you're getting and can adjust the spice level per your own liking.

I first tried making this seasoning mix a few years ago and truly loved the flexibility of making it myself at home.

Since then, I've tweaked and played with it until I found a version I like. This pot roast seasoning recipe is now perfect (for me anyway - you may have to also tweak to your own preference).

What makes this recipe so yummy

  • This seasoning mix can actually be used on so many things. I love to use it to make a pot roast gravy, brown gravy, . When any sauces need to be thickened etc. I use it a lot so always have a jar on hand in my spice cabinet.
  • Making it yourself you'll be able to tweak it.
  • The whole family loves any meal made with these basic ingredients.

Groceries you'll need: Ingredients

Seasonings all measured out for a pot roast.
  • All purpose flour
  • Onion Powder
  • Black Pepper
  • Smoked Paprika
  • Celery Salt
  • Basil
  • Parsley
  • Oregano
  • Thyme
  • Rosemary
  • Cayenne
  • Kosher Salt

  • Step 1: Add all spices to a small mixing bowl.
  • Step 2: Stir together until totally combined with a whisk.
  • Step 3: Decant to a jar for safe keeping.

Hint: Make sure to keep this spice blend labeled so that it doesn't get stranded at the back of your spice drawer and give a good shake before using.

Recipe variations and substitute ideas

  • Corn Starch - instead of flour - you won't need as much though. A tablespoon of cornstarch is plenty.
  • Brown Sugar - is often added.
  • Garlic Powder - add a few teaspoons garlic powder.
  • Wheat flour - could be used instead of all purpose.
  • Onion Soup Mix - some people add this - but then I want to avoid using these prepackaged items.
  • Dehydrated Onion - this could be helpful.
  • Yeast Extract - this can often add another flavor profile.
  • Worcestershire Sauce - for added umami flavor.
  • Bay Leaf - adding a teaspoon of crushed bayleaves.
  • Baby Carrots - get those added to your roast for sure, for sweetness.

It's just a delicious recipe for pot roasts, so not much equipment is needed really. You'll need a bowl to mix the seasonings in as well as a wire whisk to stir it up. Although, if you're going to store in a resealable bag you could probably just shake it up. Don't you love easy recipes.

How to store seasonings

Store in an airtight container, in a cool place that is dry.

When you need to use this delicious seasoning blend, best practice is to rub the meat down with the seasoning. It's a great rub for pot roast. Sear the meat then add to your cooking vessel - whether it be a slow cooker, Dutch Oven or Instant Pot. Add your fluids (this could be a beef stock, cup water, red wine, etc.)

Mel's kitchen notes

Using fresh spices will always give you the best results. If your spices are old then the flavors won't be as vibrant. This seasoning gives amazing flavor and nice color.

Can this recipe be used in a slow cooker?

Definitely. Look above - there's a picture of a crock pot with a pot roast recipe in there. This roast rub (as it's sometimes called) was used in the making of that. It's seriously the best crock pot roast recipe.

What Could I Use this pot roast seasoning for?

* A delicious dry rub
* To make flavorful meat
* Not to mention the delicious gravy this will make for your favorite roast.

How much should I use?

I use the following ratio:
For each Cup of fluid I'll use about 2 Tablespoons of the homemade pot roast seasoning.
1 pound of meat : 1 Cup Fluid : 2 tablespoon of the homemade spice blend.

  • Glass Mixing Bowls
  • OXO Good Grips 11-Inch Balloon Whisk,Black
  • Label Stickers for Jars and Lids
  • Mason Jars, 8 oz Glass Jars

Ingredients

  • 1 Cup All Purpose Flour
  • 2 Tablespoons Garlic Powder
  • 2 Tablespoons Black Pepper
  • 2 Tablespoons Smoked Paprika
  • 1 Tablespoon Dried Basil
  • 1 Tablespoon Dried Parsley
  • 1 teaspoon Celery Salt
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Rosemary
  • ½ teaspoon Cayenne Pepper
  • 1 Tablespoon Salt

Instructions

  • Add all the herbs and spices to a bowl and mix well with a small whisk.
    1 Cup All Purpose Flour, 2 Tablespoons Garlic Powder, 2 Tablespoons Black Pepper, 2 Tablespoons Smoked Paprika, 1 Tablespoon Dried Basil, 1 Tablespoon Dried Parsley, 1 teaspoon Celery Salt, 1 teaspoon Dried Thyme, 1 teaspoon Dried Oregano, 1 teaspoon Dried Rosemary, ½ teaspoon Cayenne Pepper, 1 Tablespoon Salt
  • Add to a container to store.

Notes

My favorite way to use this seasoning recipe is during the searing process at the start of the recipe. I take the required amount and rub all over the roast, then sear it. Upon adding the stock/fluid the flour in the seasoning will help thicken the fluids.
I use about ½ Cup of the seasoning to about 3 cups of fluid.

      Good question. I usually use about 1/2 Cup of the seasoning to about 3 cups fluid. I am updating my post now to reflect this! Thanks Darin.
