This recipe is such a classic to the bayou area down here in South Louisiana.
James says his grandma used to cook this dish all the time while he was growing up. Typically, the dish of carrots and ground meat would be simmered then served over the rice.

- Ground Beef
- Carrots
- Chicken Broth
- Yellow Onions
- Butter
- White Rice
- Worcestershire Sauce
- Creole Seasoning
- Garlic Powder
- Fresh Parsley

Recipe walkthrough: Instructions
This is an overview of the recipe steps. For more detailed instructions visit the recipe card at the bottom of this post.
- Step 1: Saute the ground beef in a large skillet until no pink remains. Drain and set aside.
- Step 2: In the same skillet, add the butter and melt over medium heat.
- Step 3: Add the diced onions and cook until soft.
- Step 4: Add the sliced carrots and seasonings and cook another 5 minutes.
- Step 5: Add the vegetables and beef to the slow cooker.
- Step 6: Pour over the chicken broth.
- Step 7: Give a good stir then cover and cook for 2 hours.
- Step 8: Rinse the rice.
- Step 9 Add the rice to the slow cooker.
- Step 10: Give a stir and cover and cook again another 2 hours. Season with salt and pepper and sprinkle with chopped parsley.
Hint: You could make it quicker by adding cooked rice. You won't need the same amount of fuid though.
Recipe variations and substitute ideas
- Olive Oil - instead of butter.
- Corn - tastes great too.
- Soy Sauce - instead of Worcestershire.
- Beef Broth - instead of chicken broth.
- Green Beans - or other vegetables.
Recipe troubleshooting
Rice is too mushy - this will happen if too much fluid was added, or if it's stirred too much. Also if you cook for too long.

- 3 Pounds Ground Beef
- 4 Tablespoons Unsalted Butter
- 2 Each Yellow Onions diced
- 6 Each Carrots large, peeled and sliced
- 1 Tablespoon Creole Seasoning
- 1 teaspoon Garlic Powder
- 4 Cups Chicken Broth
- 2 teaspoons Worcestershire Sauce
- 2 Cups Long Grain White Rice rinsed
- 2 Tablespoons Fresh Parsley chopped (optional garnish)
Instructions
- Add the ground beef to a large skillet and cook over medium-high heat until no pink remains. Drain and put to the side.3 Pounds Ground Beef
- Wipe out the skillet with a paper towel and add/melt the butter.4 Tablespoons Unsalted Butter
- Add the diced onion and cook until soft, about 5 minutes.2 Each Yellow Onions
- Add the sliced carrots, with the seasonings. Cook another 5 minutes.6 Each Carrots, 1 Tablespoon Creole Seasoning, 1 teaspoon Garlic Powder
- Add the veggies to the crock pot, along with the cooked ground meat.
- Add the chicken broth and Worcestershire sauce.4 Cups Chicken Broth, 2 teaspoons Worcestershire Sauce
- Stir and cover. Cook on high for 2 hours.
- Rinse the rice, then add to the slow cooker. Stir, cover and cook again for another 2 hours on high.2 Cups Long Grain White Rice
- Give a quick stir and keep the lid off the slow cooker. Don't over stir.Garnish with chopped parsley and serve.2 Tablespoons Fresh Parsley
