Changing things up every once in a while is great. This Slow Cooker Buffalo Chicken Chili certainly does that. Perfect for those colder months, although we've been known to dish it up in the summer - it's a delicious, hearty and flavorful chili.

What makes this recipe so yummy

  • I'm not a fan of eating the same old same old all the time. I love trying new things and like to pull out a little something different here and there. This recipe is perfect for then. All the flavors of some delicious buffalo wings but in a chili form. Fabulous.
  • If you love Buffalo Hot Wings you'll love this chili.
  • If you like spicy food, then this is for you too!

Buffalo Chicken Chili Recipe Instructions

This is an overview of the recipe steps. For more detailed instructions visit the recipe card at the bottom of this post.

Step 1: Brown the ground chicken in a large skillet over medium-high heat.
A slow cooker full of ingredients nicely arranged.
Step 2: Add to the slow cooker with the celery, green onions, corn, tomatoes, beans, wing sauce and seasonings.

Step 3: Pour in the chicken broth.

Step 4: Give everything a good stir then cover and cook on low for 6-8 hours or high for 4-6.

Step 5: One hour before the end of the cooking time add the cream cheese in blocks.

Step 6: Cover again and cook for another one hour.

Step 7: Stir the cream cheese into the buffalo chicken chili until completely melted.

Step 8: Add the sour cream, stir and serve.

Hint: Use the same sides for this like you would if you were eating buffalo hot wings, or a chili. So I go for some blue cheese crumbles, cilantro, cornbread, tortilla chips, a dollop of sour cream....

Recipe variations and substitute ideas

  • White Beans - i used Cannellini beans in this recipe but navy peas or great northerns would be fine.
  • Green Chilies - add a little heat (and great flavor). Add a 4oz can of green chilies.
  • Shredded Chicken - instead of using ground chicken you could add some shredded rotisserie chicken at about the same time you'd add the cream cheese.
  • Black Beans - add some black beans if you like, that would be good.
  • Cheddar Cheese - add some grated cheddar cheese at the end as a garnish.
  • Boneless skinless chicken thighs - add this instead of the ground chicken, or maybe some skinless chicken breasts.
  • Ranch Dressing Mix - I have heard of people using this instead of the seasonings I used. I haven't tried it with this, if you do try it please comment below how you liked it.
  • Garlic - Try adding some fresh chopped cloves garlic.
  • White Rice - Offer this on the side as an optional extra.
  • Tortilla Strips - Cut these into smaller pieces and drop into the chili when serving.
  • Red Bell Pepper - this could add a nice touch of sweetness.
  • Tomato Sauce - some people like a little tomato sauce added.
  • Chili Beans - add these instead of the other beans.

How to store leftovers

Once the chili has cooled completely store in an airtight container in the refrigerator for up to 4 days.

This recipe freezes very well. Store in a freezer safe container and freeze for up to 3 months.

If you are going to be preparing this for game day or a pot luck make it the day before. As with any chili recipe it ALWAYS tastes better the next day!

This slow cooker buffalo chicken chili recipe is a delicious version of a white chicken chili that I just love. It's creamy, hearty and reminds me of yummy buffalo wings!

Equipment

  • Large 12" Skillet
  • 7 Quart Crock Pot

Ingredients

  • 1 Pound Ground Chicken
  • 2 teaspoons Chili Powder
  • 2 teaspoons Ground Cumin
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 2 Ribs Celery chopped
  • 2 Each Green Onions chopped
  • ½ Cup Frozen Corn
  • 1 (14 Ounce) Can Fire Roasted Tomatoes drained
  • 1 (14 Ounce) Can Cannellini Beans drained and rinsed
  • ½ Cup Buffalo Hot Wings Sauce
  • 3 Cups Chicken Broth
  • 1 (8 Ounce) Block Cream Cheese softened
  • ½ Cup Sour Cream

Optional Toppings

  • Crumbled Blue Cheese
  • Fresh Cilantro

Instructions

  • Add the ground chicken to a large 12" skillet and cook over medium-high heat until totally browned.
    1 Pound Ground Chicken
  • Add to the slow cooker along with the chopped celery, green onions, whole kernel corn, drained tomatoes, drained and rinsed cannellini beans, hot sauce, chili powder, cumin, onion powder and garlic powder.
    2 teaspoons Chili Powder, 2 teaspoons Ground Cumin, 1 teaspoon Garlic Powder, 1 teaspoon Onion Powder, 2 Ribs Celery, 2 Each Green Onions, ½ Cup Frozen Corn, 1 (14 Ounce) Can Fire Roasted Tomatoes, 1 (14 Ounce) Can Cannellini Beans, ½ Cup Buffalo Hot Wings Sauce
  • Add the chicken broth.
    3 Cups Chicken Broth
  • Give the slow cooker a good stir and cook on low for 8 hours (or high for 4-6).
  • One hour before the end of cooking time add the softened cream cheese in cubes.
    1 (8 Ounce) Block Cream Cheese
  • Stir, Cover and cook for the last hour.
  • Stir with a whisk to mix the cream cheese into the chili and melt.
  • Add the sour cream, stir and serve with optional toppings.
    ½ Cup Sour Cream, Crumbled Blue Cheese, Fresh Cilantro

Notes

I like to offer corn chips and corn bread with this slow cooker buffalo chicken chili. The things you would normally eat along with some buffalo hot wings you'd do the same here. Hence the blue cheese.
Another favorite soup of mine is a Copycat Saltgrass Steakhouse Baked Potato Soup, it's the best!
