Crockpot Frito Pie is a delicious south-western flavored dish full of spice and flavor. Serving chili over fritos is such a fabulous way to incorporate that masa flavor into your plate of chili.

Recipe walkthrough: Instructions

This is an overview of the recipe steps. For more detailed instructions visit the recipe card at the bottom of this post.

  • Step 1: Brown the ground beef in a large skillet until no pink remains.
  • Step 2: While the ground beef is browning add all the other ingredients (except the fritos) to the crock pot.
  • Step 3: Once the ground meat has browned, drain the fluid and add to the slow cooker.
  • Step 4: Cook on high for 4 hours or low for 8 hours.

  • Step 5: Serve over frito corn chips, with your favorite toppings.
  • (optional toppings: shredded cheese, sour cream, avocado, jalapenos, green onions, red onions, etc.)

Hint: Using Mexene Chili Powder is a little short cut I like to use instead of using a few different spices. Their mixture of chili powder and cumin is perfectly balanced.

Recipe variations and substitute ideas

  • Ground Venison - instead of ground beef.
  • Ground Turkey - instead of ground beef.
  • Cheddar Cheese - as a topping is great.
  • Taco Seasoning - instead of the Mexene chili powder mix.
  • Black Beans - these are great in a chili.
  • Kidney Beans - same as above.
  • Chicken Broth - use this instead of beef broth if you don't have any.

How to store leftovers

Once the crockpot frito pie has cooled completely store in an airtight container in the refrigerator for up to 4 days.

This recipe does freeze exceptionally well. Store in the freezer in a freezer safe container for up to 3 months.

  • Large 12" Skillet
  • 6 Quart Crock Pot

Ingredients

  • 2 Pounds Ground Beef
  • 1 Each Yellow Onion diced
  • 1 Rib Celery diced
  • 1 Each Green Bell Pepper diced
  • 4 Cloves Garlic minced
  • 1 (28 Ounce) Can Chili Beans
  • 1 Cup Beef Broth
  • 1 (15 Ounce) Can Diced Tomatoes
  • 1 (15 Ounce) Can Tomato Sauce
  • 2 Tablespoons Mexene Chili Powder
  • 1 (9.25 Ounce) Bag Frito Corn Chips
  • Favorite Toppings optional

Instructions

  • Brown the ground beef in a large skillet until no pink remains.
    2 Pounds Ground Beef
  • While the ground beef is browning add the remaining ingredients to a 6 Quart (or larger) crockpot.
  • Drain the ground beef and add to the crockpot with the other ingredients.
    1 Each Yellow Onion, 1 Rib Celery, 1 Each Green Bell Pepper, 4 Cloves Garlic, 1 (28 Ounce) Can Chili Beans, 1 Cup Beef Broth, 1 (15 Ounce) Can Diced Tomatoes, 1 (15 Ounce) Can Tomato Sauce, 2 Tablespoons Mexene Chili Powder
  • Cover and cook on high for 4 hours (or low for 8 hours).
  • Serve over corn chips, with favorite toppings (e.g. grated cheese, sour cream, avocado, jalapenos, etc.)
