Salsa Fresca is a blend of delicious ripe tomatoes, red onions, jalapeno, fresh cilantro and lime juice, all mixed up to make a refreshing Mexican dip that we all love. Also known as a Pico de Gallo recipe.
Of course, this recipe is really popular for Cinco de Mayo. It is a really popular recipe year round though.
The ingredients are not seasonal, and it is a really great dip or side dish for any occasion.

- Step 1: Chop all the ingredients to as uniform a size as possible.
- Step 2: Add to a mixing bowl.
- Step 3: Squeeze the lime juice all over and add salt and pepper to taste.
- Step 4: Stir together.
- Allow to rest at room temperature.
Expert Tip: Allowing the dip to sit at room temperature for a while before 'dipping-in' will create much more flavor and a better texture as the ingredients marry together. It's not totally necessary, but will give you a much better Salsa Fresca!

- Onions - white onion, green onions, or yellow onions will work.

- Olive Oil - if you like more fluid.
- Eggs - this will change up the recipe completely though.

Not much equipment is needed for this recipe. A chopping board and knife, for chopping the vegetables, and a bowl and spoon to mix them together.

How to store leftovers
Store leftover salsa fresca in an airtight container in the refrigerator for 3 days. Any longer than that and it'll get a little too mushy.
You can freeze it, but it will freeze better earlier, as the softer it gets the weirder the texture after thawing. Freeze for up to 3 months in a freezer safe container.

- The fresher the ingredients the better it will taste. Use the most ripe tomatoes you can get.
- Don't forego the salt, it will enhance the flavors.
- Allowing the dip to rest before eating will increase the incredible flavors.
- Use only the flesh of the tomatoes, not the seeds and juices (or it will make the dip too watery.

- 1 Mixing Spoon
- 1 Chopping Knife
Ingredients
- 5 Each Roma tomatoes seeds and juices removed
- ½ Each Red Onion
- 1 Each Jalapeno Peppers
- 1 Each Lime juiced
- 2 Tablespoons Fresh Cilantro chopped
- ¼ teaspoon Salt or to taste,
- ¼ teaspoon Black Pepper or to taste
Instructions
- Wash and dice the tomato flesh (minus the seeds and juice), the red onion, cilantro, jalapenos then set aside.5 Each Roma tomatoes, ½ Each Red Onion, 2 Tablespoons Fresh Cilantro, 1 Each Jalapeno Peppers
- In a medium bowl, add the diced tomatoes, diced onion, chopped jalapeno, chopped cilantro, the juice of the lime and season with salt and pepper. Mix until well combined.1 Each Lime, ¼ teaspoon Salt, ¼ teaspoon Black Pepper
- Allow to sit at room temperature for 30 minutes, for the flavors to marry.
- Serve with tortilla chips
