I will normally pull out this recipe if I have people staying over. If I have a few people I need to feed, breakfast casseroles are always the way to go.

If you've never tried chicken and waffles you are truly missing out. I'll never forget the first time I tried it.

  • Step 1: Cut the chicken fries into thirds (bite-sized pieces).
  • Step 2: Toast waffles then cut into bite size pieces (about 1-inch pieces).
  • Step 3: Place waffles and chicken pieces in a large bowl, mix together and place in a 13x9" Casserole dish that has been sprayed with cooking spray.
  • Step 4: In a large bowl, mix the eggs, milk, maple syrup, butter and salt and pepper with a whisk then pour egg mixture over the chicken and waffles mixture in the baking dish.
  • Step 5: Bake in the oven for 1 hour, until golden brown on top and set in the middle.
  • Serve with a drizzle of maple syrup.

Hint: Serve with your favorite syrup, honey or other condiments.

Recipe variations and substitute ideas

  • Popcorn Chicken - instead of chicken fries.
  • Chicken Tenders - as above.
  • Brown Sugar - sprinkle a little on top of the casserole.
  • Hot Sauce - for some heat.
  • Garlic Powder - if you like.
  • Heavy Cream - instead of the milk.
  • Chicken Nuggets - instead of chicken fries.
  • Chili Powder - some people like to add a pinch of chilli powder for extra heat.
  • Lemon Zest - if you like.
  • Mustard Powder - if you like.
  • Pepper Jelly - use ½ Cup Pepper Jelly instead of the syrup.
  • Lemon Extract - add a drop.

How to store leftovers

Once the chicken and waffles casserole has cooled completely it should be stored in the refrigerator in an airtight container or covered with plastic wrap for up to 3 days. To reheat, simply use the microwave.

Mel's kitchen notes

Test the center of the casserole with a knife to check for doneness. Sometimes it can appear to be cooked but still be soft. (If it is browning too much on top but still too soft inside, cover the top with aluminum foil.)

  • Glass Mixing Bowls
  • Casserole Dish 13x9

Ingredients

  • 16 Each Frozen Homestyle Waffles
  • 1 (28 Ounce) Bag Frozen Chicken Fries
  • 12 Each Large Eggs
  • 1 Cup Milk
  • ½ Cup Unsalted Butter unsalted and melted
  • ½ Cup Maple Syrup
  • Salt and Pepper to taste

Instructions

  • Preheat oven to 350°F.
  • Toast all the waffles then cut into bite size pieces.
    16 Each Frozen Homestyle Waffles
  • While that's happening cut all the chicken fries into thirds.
    1 (28 Ounce) Bag Frozen Chicken Fries
  • Mix together and place into a 13x9" Casserole Dish that you've sprayed with cooking spray.
  • In a large mixing bowl add the eggs, milk, melted butter and maple syrup and mix well. Season with salt and pepper to taste.
    12 Each Large Eggs, 1 Cup Milk, ½ Cup Unsalted Butter, ½ Cup Maple Syrup, Salt and Pepper to taste
  • Pour over the Chicken and Waffle Casserole then bake for 60 minutes.
  • Remove and serve with favorite syrup or honey.
