Why My Recipe

I may not have been born and bred here, but am married to a pure Cajun. After transplanting in south Louisiana I have been obsessed with mastering the recipes made in the area.
Biscuits and Gravy is a classic southern recipe that didn't take long to conquer.
I feel my addition of grated onion to the sausage gravy really kicks it up a notch in the flavor department.

Groceries you'll need: Ingredients

Ingredients all laid out showing what is needed to make a southern biscuits and gravy recipe.

See recipe card at the bottom of this post for quantities.

Biscuits and Gravy Recipe Instructions

This is an overview of the recipe steps. For more detailed instructions visit the recipe card at the bottom of this post.

Baked biscuits on a baking sheet, being brushed with butter.
Step 1: Make and bake biscuits in the oven, per my old fashioned biscuit recipe.
Butter added to a large iron skillet.
Step 2: Add butter to a skillet and melt over medium heat.
Breakfast sausage meat added to a large iron skillet with some onions.
Step 3: Add the pork sausage and grated onion, cook until no pink remains.
Flour added to a large iron skillet with browned sausage meat.
Step 4: Add the flour to the crumbles and cook another 5 minutes.
Milk being poured into a large skillet with browned meat.
Step 5: Heat the milk then slowly pour into the skillet, stirring constantly.
Seasonings added to a white gravy in a skillet.
Step 6: Stir in the seasoning then allow to simmer for 5 minutes or more.
Step 7: Cut the biscuits in half and lay on a dish. Serve the sausage gravy over the top of the biscuits.

Hint: Heating the milk before adding to the skillet will help stop any lumps from forming - you still want to add slowly though while stirring.

Recipe variations and substitute ideas

  • Store-bought Biscuits - instead of homemade (to speed things up). I recommend the buttermilk biscuits.
  • Red Pepper Flakes - Sprinkle some to add a little heat.
  • Sage - if you were not able to find breakfast sausage then add a touch of sage, for tastes.
  • Chicken - you could use ground chicken if you prefer or turkey sausage.

Recipe Troubleshooting

  • Gravy is too thick - if you find your gravy is too thick, add a touch more milk to thin it out.
  • Gravy is too thin - cook a little longer to reduce the gravy some more.

You'll need a large mixing bowl to make the biscuits, as well as a baking sheet to bake them.

I like to use my cast iron skillet for this recipe, and a wooden spoon, or a whisk.

I have some affiliate links in the recipe card below.

How to store leftovers

Once cooled completely, store in the refrigerator in an airtight container for up to 4 days.

The biscuits will freeze well, and the gravy too. Store in a freezer safe container for up to 3 months.

Mel's kitchen notes

Don't top the biscuits with the gravy until you're ready to serve. Otherwise, if there are leftovers they'll end up soggy.
Any leftovers can then be stored separately and reheated as needed.

½ teaspoon Cajun Seasoning, 1 ½ teaspoons Black Pepper
  • Take one of the biscuits you baked and cut in half. Pour the sausage gravy over the top, and serve (garnish with cracked black pepper and parsley.

Notes

The gravy will thicken more as it cools too, so don't worry that it's not thick enough.
If you prefer your gravy a lot thicker, cook it down a little longer.
