Why My Recipe
I may not have been born and bred here, but am married to a pure Cajun. After transplanting in south Louisiana I have been obsessed with mastering the recipes made in the area.
Biscuits and Gravy is a classic southern recipe that didn't take long to conquer.
I feel my addition of grated onion to the sausage gravy really kicks it up a notch in the flavor department.
Groceries you'll need: Ingredients
- Unsalted Butter
- All Purpose Flour
- Baking Powder
- Sugar
- Salt
- Whole Milk
- Pork Sausage (breakfast sausage)
- Cajun Seasoning
- Black Pepper
- Yellow Onion
- Black Pepper

Recipe walkthrough: Instructions
This is an overview of the recipe steps. For more detailed instructions visit the recipe card at the bottom of this post.
- Step 1: Make and bake biscuits per my old fashioned biscuit recipe.
- Step 2: Add butter to a skillet.
- Step 3: Add the pork sausage and grated onion, cook until no pink remains.
- Step 4: Add the flour and cook another 5 minutes.
- Step 5: Heat the milk then slowly pour into the skillet, stirring constantly.
- Step 6: Stir in the seasoning then allow to simmer for 5 minutes or more.
- Step 7: Cut the biscuits in half and serve the sausage gravy over the top of the biscuits.
Hint: Heating the milk before adding to the skillet will help stop any lumps from forming - you still want to add slowly though while stirring.
Recipe variations and substitute ideas
- Store-bought Biscuits - instead of homemade (to speed things up). I recommend the buttermilk biscuits.
- Red Pepper Flakes - to add a little heat.
- Sage - if you were not able to find breakfast sausage then add a touch of sage, for tastes.
Recipe Troubleshooting
- Gravy is too thick - if you find your gravy is too thick, add a touch more milk to thin it out.
- Gravy is too thin - cook a little longer to reduce the gravy some more.

You'll need a large mixing bowl to make the biscuits, as well as a baking sheet to bake them.

How to store leftovers
Once cooled completely, store in the refrigerator in an airtight container for up to 4 days.
The biscuits will freeze well, and the gravy too. Store in a freezer safe container for up to 3 months.
Mel's kitchen notes
Don't top the biscuits with the gravy until you're ready to serve. Otherwise, if there are leftovers they'll end up soggy.
Any leftovers can then be stored separately and reheated as needed.

Comforting Biscuits and Gravy
Ingredients
Biscuit Recipe
- 6 Tablespoons Unsalted Butter frozen
- 2 Cups All Purpose Flour
- 1 Tablespoon Baking Powder
- 1 Tablespoon Granulated Sugar
- 1 teaspoon Salt
- ¾ Cup Whole Milk cold
Sausage Gravy Recipe
- 2 Tablespoons Unsalted Butter
- 1 Pounds Pork Sausage like Jimmy Dean
- ¼ Cup Yellow Onions grated
- ¼ Cup All Purpose Flour
- 2 ½ Cups Whole Milk heated
- ½ teaspoon Cajun Seasoning
- 1 ½ teaspoons Black Pepper
Instructions
- Follow Homemade Biscuits Recipe for 6-8 Biscuits.6 Tablespoons Unsalted Butter, 2 Cups All Purpose Flour, 1 Tablespoon Baking Powder, 1 Tablespoon Granulated Sugar, 1 teaspoon Salt, ¾ Cup Whole Milk
- Add 2 Tablespoons of butter to a large skillet, over medium-high heat.2 Tablespoons Unsalted Butter
- Add the breakfast sausage and grated onion and cook until no pink remains.1 Pounds Pork Sausage, ¼ Cup Yellow Onions
- Add the flour and continue to cook for another 5 minutes.¼ Cup All Purpose Flour
- Slowly pour in the heated milk, a little at a time, while stirring. Take your time with this step, to avoid a lumpy gravy.2 ½ Cups Whole Milk
- When all the milk is added, add the seasonings and allow to simmer for about 5 minutes, it should thicken up.½ teaspoon Cajun Seasoning, 1 ½ teaspoons Black Pepper
- Take one of the biscuits you baked and cut in half. Pour the sausage gravy over the top, and serve (garnish with cracked black pepper and parsley.
