These ghost cupcakes with marshmallow are my favorite Halloween cupcake. Super simple to make, yet surprisingly good. A large, chocolate-stuffed marshmallow is coated in a white candy coating for a spooktacular treat.

- Red Velvet Boxed Cake Mix
- Jumbo Stuffed Marshmallows
- White Candy Melts (or candy wafers)
- Candy eyes
- Eggs
- Oil
- Water

Recipe walkthrough: Instructions

- Step 1: In a large bowl mix the cake mix and bake the cupcakes per the package instructions (preferably in dark-colored cupcake liners).
- Step 2: Place a stuffed marshmallow on top of the cooled cupcakes.
- Step 3: Melt the candy wafers on 50% power in the microwave in 30 second bursts until melted (add shortening if needed).
- Step 4: Spoon the coating over the top of the marshmallow.
- Step 5: Place two eyes on each before the candy coating dries.
Hint: It doesn't necessarily have to be red velvet cupcakes, here you can use your favorite homemade recipe or any other flavor of cupcakes you like.
Recipe variations and substitute ideas
- Chocolate Cupcakes - use chocolate instead of red velvet.
- Homemade Frosting - add a little frosting underneath the ghost if you like.
- Mini chocolate chips - if you don't have candy eyes you could press mini chocolate chips for the eyes instead.
- Melted Chocolate - instead of candy melts you could use melted white chocolate instead.
- Marshmallow fluff - instead of using a large marshmallow you could pipe a ghost onto the top of the cupcake using a marshmallow fluff based frosting, a piping bag and a round tip.
- Cream Cheese Frosting - Add some colored cream cheese frosting under each ghost.
- Edible Marker - instead of using candy eyes you could draw a ghost face using an edible marker for an easy way to replace the candy eyes.

How to store leftovers
Store at room temperature in an airtight container for up to 4 days.
They don't freeze well so I would make enough for your party then give away the rest if you have leftovers and no one to eat them.

If you find the marshmallow is not sitting still enough on top of the cupcake in order for you to spoon the candy coating on top you can hold it there with a toothpick into the center of each cupcake.

Ghost Cupcakes With Marshmallow
Ingredients
- 1 (15 Ounce) Box Red Velvet Cake Mix
- ½ Cup Vegetable Oil
- 1-¼ Cups Water
- 3 Each Large Eggs
- 2 (8.6 Ounce) Packs Chocolate Stuffed Marshmallows
- 12 Ounces White Candy Melting Wafers
- 1 Pack Candy Eyes
Instructions
- Heat the oven to 350°F and line a cupcake tray with cupcake cases.
- Mix the cupcake mix, eggs, water and oil in a large mixing bowl. Divide batter between each cupcake liner to about ¾ full.1 (15 Ounce) Box Red Velvet Cake Mix, ½ Cup Vegetable Oil, 1-¼ Cups Water, 3 Each Large Eggs
- Bake for 15 minutes then remove and allow to cool completely.
- Place a marshmallow on top of each cupcake.2 (8.6 Ounce) Packs Chocolate Stuffed Marshmallows
- Melt the candy wafers in the microwave on 50% power, in 30-second bursts until completely melted. Add a teaspoon of vegetable shortening if you need to thin it a little.12 Ounces White Candy Melting Wafers
- Using a spoon pour the melted candy over the top of each marshmallow, just enough to allow it to reach the bottom of the marshmallow and a little past.
- While the candy is still wet place two candy eyes on the ghost.1 Pack Candy Eyes
