Simple use of a box mix for the cake part of the cupcake. Your favorite chocolate cake mix is fine. Any light chocolaty cake is fine (I did try using a brownie mix during testing and it didn't work as well).

S'mores cupcakes have a marshmallow frosting that is so deliciously gooey all you need after making these cupcakes is a campfire!

  • Graham Cracker crumbs
  • Butter
  • Granulated Sugar
  • Chocolate cake mix
  • Eggs
  • Water
  • Vegetable Oil
  • Powdered Sugar
  • Vanilla Extract
  • Marshmallow Creme (cream)
  • Mini Hershey Chocolate Bars
  • Mini Marshmallows
  • Chocolate Syrup

Recipe walkthrough: Instructions

This is an overview of the recipe steps. For more detailed instructions visit the recipe card at the bottom of this post.

  • Step 1: In a mixing bowl mix the graham cracker crumbs, butter and sugar.
  • Step 2: Press about a tablespoon of this mixture into a cupcake liner - in a muffin pan. Use the back of a spoon to press down (or your fingers).
  • Step 3: In a large bowl prepare the cake mix per box mix instructions.
  • Step 4: Spoon the cake mix evenly over the top of the graham crackers and bake.

  • Step 5: Allow the cupcakes to cool completely on a wire rack.
  • Step 6: Mix the marshmallow fluff, vanilla, powdered sugar to make the frosting. Beat the mixture until stiff peaks form.

Hint: Remove the cupcakes from the pan first before you start to frost so that you don't mess up the frosting when trying to remove them.

  • Step 7: Frost and decorate cupcakes, using the mini chocolate pieces, mini marshmallows, Graham cracker crumbs and chocolate sauce.

Recipe variations and substitute ideas

  • Toasted Marshmallows - use the bigger marshmallows and toast them before adding to the top of a cupcake.
  • Homemade Cake - if you prefer to make your own cake mix instead of using a prefab cake that is fine. You obviously know what you're doing 😉
  • Salt - add a pinch of salt to bring out the flavors.

If your cupcakes have risen too much into a dome shape cut the tops off, or you won't have enough room to add your frosting and decorations.

S'mores Cupcake Recipe

These decadent cupcakes have a firm crust made of graham crackers with a soft chocolaty cake, topped with a marshmallow gooey icing. These taste so much like the real thing you will think you're out camping!

Equipment

  • Wilton Cupcake Pan, 12-Cup, Steel
  • Glass Mixing Bowls
  • Hand Mixer

Ingredients

Crust

  • 1-¼ Cups Graham Cracker Crumbs
  • ¼ Cup Unsalted Butter
  • 2 Tablespoons Granulated Sugar

Cupcakes

  • 16 Ounces Chocolate Cake Mix 1 box
  • 3 Each Large Eggs
  • 1 Cup Water
  • ½ Cup Vegetable Oil

Frosting

  • 1-½ Cups Unsalted Butter softened
  • 2 Cups Powdered Sugar
  • 2 teaspoons Vanilla Extract
  • 2 (7 Ounce) Jars Marshmallow Creme 2 x 7oz jars

Decorations

  • 8 Each Mini Hershey Chocolate Bars
  • 48 Each Mini Marshmallows
  • 3 Tablespoons Chocolate Sauce

Instructions

  • Preheat oven to 350°F.
  • Mix the graham cracker crumbs, sugar and butter then divide evenly, in the bottom of baking cups, pressing down to compact with the back of a spoon.
    1-¼ Cups Graham Cracker Crumbs, ¼ Cup Unsalted Butter, 2 Tablespoons Granulated Sugar
  • Combine the cake ingredients as per the box instructions. Divide evenly between the baking cups filling until about ¾ full. Bake in the oven for time instructed on the box - insert a toothpick to check that they have cooked enough. The toothpick needs to come out clean.
    16 Ounces Chocolate Cake Mix, 3 Each Large Eggs, 1 Cup Water, ½ Cup Vegetable Oil
  • Remove all the cupcakes from the pan onto a cooling rack and allow to cool completely.
  • In a mixing bowl combine the frosting ingredients except the marshmallow creme. Beat for about 2 minutes, then slowly add the marshmallow creme and continue beating until completely combined.
    1-½ Cups Unsalted Butter, 2 Cups Powdered Sugar, 2 teaspoons Vanilla Extract, 2 (7 Ounce) Jars Marshmallow Creme
  • Frost and decorate cupcakes as desired.
    8 Each Mini Hershey Chocolate Bars, 48 Each Mini Marshmallows, 3 Tablespoons Chocolate Sauce

Notes

These cupcakes can be decorated in any way, the chocolate/marshmallow theme is perfect and adds some texture to the cupcake, but this is completely flexible.

    Cupcakes were amazing but not sure what happened. The graham cracker did not stay together. What did I do wrong

      Sometimes, if the crackers were not pressed together tightly with a measuring cup, or even just your fingers, they won't hold together.
